I'll try them. I keep trying Benedictine in as many cocktails as I can, because eventually I'll find one I like - OR finish that 750 mL bottle in my cabinet. I do need to get my hands on the Tawse Vermouth and Beatties Gin, haven't tried them yet.
If you try the Poet's Dream, definitely lower the benedictine and up the gin a little bit.. I think it will be much more balanced. My fav Benedictine cocktail is the Monte Carlo (Rye, Benedictin, Angostura, Peychaud's).. one of my favorite Old Fashioned variations!
My wife loves a Poet’s Dream, I make it quite often for her, but the version I do turns the Benedictine down a bit which reduces the sweetness - 3/4 oz gin, 1/2 oz Benedictine, 3/4 Oz dry vermouth.
