Your canned goat looks fabulous! I love having a variety of canned meats on my shelves. My brother has been combining the last fields of corn this past week & I've been able to make hot sandwiches to send home with him for supper every night since he's running til 8:30 or 9 PM. I absolutely love having canned meat on the shelf! I used to brown my chunks of meat and add broth. It took so much longer! Once I realized it tastes just as good by raw packing, my life was forever changed! Raw pack is the only way to go with chunked meat! I love sauerkraut, but my husband doesn't. That looked like a spectacular meal! Simple and delicious...my favorite.

I absolutely adore the idea of having home-canned meats in the pantry! My 1st attempt of "ugly chicken" (raw pack) went poorly, but I learned a bunch for the next time so the process was not a complete waste. The next time we come across a really good sale on chicken, I will try again but we're sticking with canning veggies and fruits for now. LOL Vlogmas may be nearly over, but then comes a brief vacation and the New Year and 2024 in review! And SO MUCH has happened over this year.
I am SO excited for this year in review video!! The baby goats and the GREENHOUSE have changed so much! Winnie was born this past spring!!! Feels like she has been here forever.
Great to make a good pork meal and can the bulk of the goat meat for later. Our garden also did great for some things like tomatoes and summer peas, but my favorite green beans were completely consumed by beetles. Oddly they had time to produce, but only flowered with no pollination. So we went to our local farm that has a store and bought a bushel. Was not the same, but I was able to can locally grown beans for the pantry.

Can you please share what kind of pressure canner you're using and where you bought it from? I've been watching your videos for a while and I'm ready to purchase one and go all in this upcoming grow season to pressure can as much as I can from my gardens.
Hi there! I have a presto canner, the larger one. It's been great! One issue I have with it is the rubber gaskets do need replacing every so often and they are hard to find locally. I would suggest springing for the All American if it can be afforded. nothing extra to worry about having on hand
I am curious on how you would describe goat meat. Like compared to the commonly eaten meats. I have a whether im debating on sending to sale vs processing. My family hasnt eaten goat. But i would love to eat more of what we raise
I made goat chili last night. Very good. And we ground a bacon end piece and put it in some ground goat. Tonight? Bacon goat burgers! Doesn't that just sound delicious?
No. Because goat is often cooked low and slow anyway the meat texture from age does not seem to matter. Pressure cooking it in this way also makes it tender.
Do you leave some of the shoulder meat on? It just seems like there's not enough between the ribs to save for anything but ground meat. We haven't pieced out that meat though and could leave it and see what we think!
@@SageandStoneHomestead I had mine butchered for me. Looks like there was a little meat left on them. But they cut the ribs in smaller portions, so it's hard to tell. Next time I think I'll have them leave them as a rack. I am the only one who eats the ribs, so there is enough meat for me.
I sharpen my knives the same way I have done for years it was a hack from my great aunt and my granny. Food looks delicious. Thanks for sharing x

To us it is very close to beef but with a pork type twist to it. Very good!

No! The goat fat is really good and grinds with it very well.

No. Because goat is often cooked low and slow anyway the meat texture from age does not seem to matter. Pressure cooking it in this way also makes it tender.
