I’ve just found your channel and I’m watching in April 2022 prices now are through the roof. The cheapest I’ve found is $1.78. Only have an Ingles and Walmart here N E Ga Mtns. Love ham so this video really helped I’ve been pressure canning like a crazy person.🙂❤️

I got a ham in my commodities today and don't have any room in the freezer. I will put it up. I can make sandwiches, ham salad, breakfast meat and etc. My family put food by, but I think I'm a better canner than my Mom and Auntie. Be Blessed. Thank you for making these videos. Y'all eat like us....

i'm new to pressure canning and a total rookie as to what and how to do things. I bought a Presto 16 that is still in the box. Trying to learn how to proceed first. Talk about putting the cart before the horse. lol, but this is my question. I cooked a cured ham and want to can it. There is ham broth in the mix as I cooked it in the oven. What now to can it? It's already cooked but I understand that I will need to process for 75 min. as I am doing pints. Do I separate the meat from broth?, cut the meat into chunks then add pure water? Would my ham have little flavor using this process? if I separate it from the broth originally cooked in do I just can that separately and for how long? All will be pints, both meat and broth. I'm new to canning but I'm an elderly woman so please be kind. Thank you for any suggestions.

I love to can my hands at Christmas also watch just before the beginning of Summer after Christmas and Easter a lot of times any big hams that Kroger has left they will mark down to about the same price as the Christmas sales and sometimes if I find I'm running low I can re-up my stash love watching you
I wanted one so bad! I mentioned on Facebook that I needed one and asked if any friends had one they wanted to sell. One friend had one that was her mother’s in the 1970’s and she was trying to figure out what to do with it. She didn’t want to can. So now I have one that is very basic and will can 7 quarts. Not the All American I dream of but it works great. You never know who has one in the garage or basement or attic. Ask before it ends up in a thrift store!
Good morning Gay. We bought a big leg of ham on the bone. It's the only ham I love really. I dislike that processed ham etc. I call it square ham lol. We couldn't find a boneless ham like you got there. I'll be freezing the ham bone for pea and ham soup down the road in winter. But really I don't think there will be any left to can for beans etc as I have ham sandwiches every lunch time until it's gone and also fried ham and eggs for breakfast. Hugs, Michelle

Looks great! What a great idea. When you put the second layer of cans in the canner, did you put something between the layers or just stack the jars on the jars?
When you render fat for lard, it is fresh off the pig, I only like the leaf fat, (deposited in the kidney area). Some people render the back fat, smells more piggy. No smell at all in the leaf, I use it for baking. My butcher was out, he said in the next few weeks he is expecting some nice pigs coming in and they do not want the fat, he only charges me $1 a pound, I get 5-7 pounds, makes about 5 pint jars by the time I am done. I just knew you got a new canner, I have one like you just used, but am new to pressure canning and was unable to do it, just got stove fixed, could not regulate heat. So I will be doing some practicing soon, your demo helped, see if we lived next door, you could help me with pressure canning and I could help you make lard. Happy New Year Gay.

This would have made a great video for Canuary! lol I have a Cook's spiral sliced ham in the refrigerator in the basement that I planned for Christmas and then didn't use it. So I'm planning it for New Years Day. Do you think I could do this with all the leftovers? It's just me and the hubby this year (staying safe) and we will get sick of ham in a few days and I thought I'd freeze the extras but canning would work too. Can you use the bones to make broth? I've never made ham broth but I seen it somewhere.
I dont see any reason that you cant use the left overs. I'd be sure and trim the fat off. I have never made ham broth....But, I think it would take lots more bones...i just dont know. Happy new year to you!!!!!! ( I wasn't included in the canuary thing....I just do my own. )

I bought 2 hams this year with just this intention. Found ham on sale for $.85lb! I fixed the smaller one for Christmas dinner and it was the worse ham we have ever had! No flavor to it at all and the texture seemed off. I took the bigger one back to the store and got my money back!! I'll be going to a different store today where they have the name brand hams on clearance. So that's how I will be starting off the New Year. Canning up ham and I've also got 15lbs of sweet potatoes I'll can up also. Be careful with your lids Gay. If they are the New Ball lids they will have more of a tendency to fail if you boil them. I've just been soaking in luke warm water after washing because of the fails I was having. Now NO fails at all. They did change the type and amount of the rubber seal in them and now they are only rated for 18 months.... Oh lucky lucky you getting a All American. I just got the Presto like yours this year to go along with my old Mirro! I canned more this year than I ever have with having 2 canners! Now I need a new gasket for my old Mirro and everywhere in the country is out of the one I need with it being so old! Hopefully by canning season they will get them in so I have 2 canners!

Dear Janice, unlike a pint of canned pork that tastes like roast pork, a pint of ham gets drier and intense in the flavor. We use it in beans, greens, or shredded fine in fried rice. I personally find it too intense in flavor for a deviled ham sandwich (ham and mayonnaise). It is also good in small amounts on baked potatoes instead of bacon bits.

Jeffery Dewberry it was fully cooked. To prepare for a meal just heat 12-15 min per pound. So. Just cut like I did and can you some ham. The canning time is the same raw or cooked on meat.
Hi, very helpful video! I'm just curious how you found the salt level when you opened the jars. Does it taste like eating a piece of baked ham, or does it taste more watered down? I'm trying to decide if I want to bake it first or not, (do you ever do that?) & whether to add broth or water. Any thoughts?
No, sorry. All meats, low acid foods and dry beans must be processed in a pressure canner. I think that once you try pressure canning you will love it. You will find so many things that you can process once you get started!
I am not trying to be negative- but is canning ham safe? I bought ham on sale recently as you did and intended to can them as you are doing but I do not see a recommended method. I would love your thoughts. Thank You!
It is not a recommended method in the ball canning book. I’m sorry I didn’t address thus. It is a proven method by many long time canners. Folks have canned smoked turkey, brisket... bacon for years as I have. But you do your research and be comfortable with your own methods. I know we all depend on the government approved methods, but, just because they haven’t proven it works doesn’t mean it won’t. This is my opinion and experience. 😄
Are you still putting vinegar in the canner. I've noticed a few other canners have not been mentioning the vinegar. Ham looks great. Great price. Thanks for the price tip.
By cold pack I assume you mean freeze? It depends on what it is. I don’t like purple hull peas pressure canned. I freeze them. There are certain things that I like better in the freezer. But to be shelf stable and safe food in jars has to be canned according to the correct pressure n time or water bathed for the designated time. Hope this answers your question
Thank you. We have so much in common however I’ve never canned much although I love to cook and bake. I like to sew and rarely in the kitchen without an apron. I also play the piano and seem to stick to southern gospel and hymns. I can tell by the way you talk about church that we were probably raised a lot alike. I think that is why I love your videos so much.

A good ham can be used in so many ways. I like it fried with eggs for breakfast.....and love ham sandwiches!!

Jeffery Dewberry it was fully cooked. To prepare for a meal just heat 12-15 min per pound. So. Just cut like I did and can you some ham. The canning time is the same raw or cooked on meat.

Hi, very helpful video! I'm just curious how you found the salt level when you opened the jars. Does it taste like eating a piece of baked ham, or does it taste more watered down? I'm trying to decide if I want to bake it first or not, (do you ever do that?) & whether to add broth or water. Any thoughts?
It isnt unusually salty. I just use it to season with. I dump broth and all in the pot.

Can this be done water bath method? I don’t own a pressure canner. I want to make sure that I get a handle on canning before I go to that expense.
No, sorry. All meats, low acid foods and dry beans must be processed in a pressure canner. I think that once you try pressure canning you will love it. You will find so many things that you can process once you get started!

I bought ham on sale recently as you did and intended to can them as you are doing but I do not see a recommended method. I would love your thoughts. Thank You!
It is not a recommended method in the ball canning book. I’m sorry I didn’t address thus. It is a proven method by many long time canners. Folks have canned smoked turkey, brisket... bacon for years as I have. But you do your research and be comfortable with your own methods. I know we all depend on the government approved methods, but, just because they haven’t proven it works doesn’t mean it won’t. This is my opinion and experience. 😄

Are you still putting vinegar in the canner. I've noticed a few other canners have not been mentioning the vinegar. Ham looks great. Great price. Thanks for the price tip.

Do you pressure most everything or do you cold pack certain things?
By cold pack I assume you mean freeze? It depends on what it is. I don’t like purple hull peas pressure canned. I freeze them. There are certain things that I like better in the freezer. But to be shelf stable and safe food in jars has to be canned according to the correct pressure n time or water bathed for the designated time. Hope this answers your question

We have so much in common however I’ve never canned much although I love to cook and bake. I like to sew and rarely in the kitchen without an apron. I also play the piano and seem to stick to southern gospel and hymns. I can tell by the way you talk about church that we were probably raised a lot alike. I think that is why I love your videos so much.

I have with good results. Do your research and decide what you feel safe doing. It’s really a personal decision.

Hmmmm. I don’t know unless maybe it had more smoke in it??? Did you pre cook it? It should be ok if it was pressured at the right temp and time.
I did not precooked it . I believe I over cooked it in the canner. I'll try again, thanks!

Yes.....they just have to be warmed.....
Put that fat in the slow cooker for 12-16 hours to render it. I save mine like bacon grease.
