Now Beccy there's a badass female chef always composed and a beast under pressure. Mary didn't so much win as she just outlasted a lot of them better chefs had been sent home, oh and let me not forget Line she would cook circles around her too.

As a cook, i do cook almost every fish skin side down. The fish is more likely to not fall apart. The crispy skin adds so much more to the fish. We mostly get it cooked all the way under the salamander (a grill)
Does it annoy anyone else that ending of the episode/the verdict is never shown on these MasterChef Canada clips are never shown?! I understand at least part of the reasoning behind it because now I’m looking for the full episode but I still find it bothersome..

There is no bad cook on this show, once they get down to 20-25 or so. Maybe earlier than that actually. And once it gets down to 12 and under, these are some seriously amazing cooks. Period. I'm a Chef and I prefer to operate away from the dining room and public view. The 'Ol "Pirate Ship" Bourdain-esque brigade. So the fact that these people are on prime time television and keeping their cool is just staggeringly awesome to me.
If you think about it, the people that are always successful in the initial competition tasks have a huge advantage. They are in the balcony able to watch everyone's techniques given they have to compete with one of the at the finally.
Dizzy Manizzy depends on the culture. in asia region for example, some countries there consist of people who cook fishes without removing the bones. Well, if that'a what TC meant tho.
