Those working those jobs depend on tips for income- For example, waiters/waitresses are paid just over $2 by the restaurant. The minimum wage is over $7, most places (like stores) are raising it to $15. Not only do restaurants pay around $2, they factor in a tip of 18% when they calculate taxes. So, if a waiter spent one hour waiting on your table, and the bill came to $100, it is assumed they made at least $18 from your bill. The tax will be 30% of $18+2. Around $6. If you don't tip, the waiter has to pay about $4. It's really unfair, when customers cheap out on tipping- most don't realize, or care, that not tipping can be such a cruel thing to do!

And that is why employees pay more to maintain that consumption level because the cost of goods and services are high.

To your last point, I'd suggest talking to your friends who actually work as waiters and waitresses- Anything below 20%, is cheap. If you're "impressed", it's at least 25%, not 18%. 18% is what the restaurant automatically charges, when there are more than 5 people in a group. Maybe it's less offensive to service providers when the customer is a student- but those who grew up here tip a minimum of 20%. The reason tips are expected, not considered a bonus, is because the wait-staff, especially, makes just over $2/hr.

Restaurants are facing a severe shortage of workers right now- slave wages, coupled with having to deal with difficult customers (not to mention the fact that all of them were let go when things shut down without notice), had a LOT of these workers moving to other professions- there are small businesses closing because they cannot staff. And YET, the model is not going away. That should tell you everything- these businesses will close, before they take a cut in their profits, and will blame the "liberals" for all of it!
