Have free camped in Spain on and of for years being as stealth as possible. Glad to know I wasn't braking any laws. Thanks for this, gives me some confidence and I'll relax next time I'm in Spain!

Chocks are allowed but the tyre must be in contact with the ground i.e. no levelling ramps are allowed.

It's actually more complicated than that, since every municipality can enact its own regulations that may be more or less restrictive than the regional ones.
The legality of the more restrictive regulations (either regional or local) is dubious, since they cannot discriminate a campervan/motorhome wrt a normal car (akin to forbidding parking to, say, yellow cars), as long as they are parked and not camping (as per your definition, beware, though, that you can't use blocks/chocks to level the van, since the wheels have to touch the ground), in fact the road sign at 3:10 in the video is not in the traffic rules, so in theory it's not legal and couldn't be used. Even in a natural park or beach site you should be able to park in a parking lot like any other car, as long as you fit in the delimited space. I personally tend to avoid sites with those signs though since I don't want to be fined (even it the fine is illegal, taking it to the courts would cost more than the fine).
The more "clever" municipalities use an height/width limit sign (which is legal since in Spain the code doesn't specify when they can be used, like, e.g. in Italy where they are legal only if there is an obstacle) or a ridiculous weight limit (ditto).
Oh, and the most ridiculous regulation that I know of is in Jaca: campervans/motorhomes cannot park anywhere, except in an area (which is always full, since it can accomodate just a handful of vans), or in a specific parking lot but only from 9 to 23 (they want us to buy in their shops and eat in their restaurants during the day NOT!), then in another one, very far from the town centre, but only from 22 to 10. Absolute madness.

I don’t know to be honest but questionable I would have said.
Quite a few roof tents do stick out wider / longer than the vehicle when open and presumably you have to have the ladder down while you are in it to get out. So I would think you could end up with a ticket.

Would a pop up roof be allowed to use while parked overnight or would it be considered camping?

As it doesn't extend the foot print of the vehicle then I suspect technically it may be allowed. However I would err on the side of caution if it were me and not use it - as a pop up roof does scream out "Camping" rather than "Parking"

Your comments are not exactly correct!
The prohibition of opening camper windows comment is wrong and there is high court jurisprudence on this issue!
The time limit on overnight stays is highly dubious, but local councils can invent [or regional government can] for official Aires.
Parking on the street, for as long as you like, irrelevant of you sleeping, eating or anything else inside the vehicle is allowed in free to park places. [With the caveat of municipal weight / size restrictions]
Don't overnight in national parks, unless they don't seem to care and lock you in. That's happened to me 😂
Spain is huge and full of free Aires... It's easy to park up anywhere! Happy travels
