for the mansion, better gear and tools are a must. maybe invest in an enchanting table setup and get some basic enchants or even enchant a diamond pickaxe with fortune and go mining for diamonds. And when it comes to the actual fight, I think there are spawners in the building so they'll keep spawning. Maybe try finding the entrance and find the spawners (if there are any) and take those out first before looting. once the spawners are gone then you can cheese it and lure them out or go to the very top and make your way down. (It'll also be really good to get an enchanted bow to hit the wizards from afar so they won't spawn vexes when you get too close)
I love your persistance with the mansion. Ngl, I would have just chucked it into creative mode and gone in and destroyed the spawners. Then leave, turn survival back on and try again. But I play MC to relax 😂
Hmm for the mansion maybe you could try tunneling under and digging up into it? Modded structures usually have spawners too you could try to get rid of if you can find them. Storage room looks rlly nice too btw!
u should make a totem of undying generator, not to sure abt the detail son how to make it but you find a desert temple and crate a generator out of it i believe.

the storage room looks so nice! you can always add torches/glowstone under the carpet for hidden lighting.
