I found this video because of my struggle. I am on the way to open pizza shop and now I test in my spiral mixer to creat this romana al taglio 80%h dough. But Im doing it directly without biga. And my dough dont form into pumpin shape but get flat under the spiral and get me so mad like cant absorb whole water to growninto a ball. Is it cuz I don’t use biga for preferment? I cannot wait to try your biga style of creating . Looks like the right way.
