Cold rice works better for fried rice as it fries up nicely without becoming mushy.Prepare the eggs: Beat the eggs in a bowl with a pinch of salt and pepper.Heat the pan: Heat a large pan or wok over medium-high heat. Add a tablespoon of oil.Cook the eggs: Pour the beaten eggs into the pan and let them cook without stirring too much, until they are fully set. Once cooked, remove them from the pan and chop them into smaller pieces.Stir-fry the vegetables and protein (if using): Add a little more oil to the pan if needed. Stir-fry any vegetables and protein you're using until they are cooked through. If using garlic, add it in and stir briefly until fragrant.Add the rice: Add the cooked rice to the pan.
