Another great video, Ry! This is my go-to method using a WSM and Firedial. I recently picked up an El Patron from LSG. This method works great on it as well.
I love doing wings on the grill and like you I normally let them dry overnight with salt and add baking powder to get the skin dry so it crisps up. How does the skin compare doing it like this?
Honestly, I kinda like these better. I noticed no difference in skin quality but much better smoke flavor. Makes sense, I suppose, since that extra bit of moisture at the first part would allow smoke particles to more easily adhere.

I sincerely appreciate your videos. I'm curious to know if you'd be willing to get the Spider Grills Venom and do some videos with that, attached to one of your kettle grills. I can't afford their Huntsman Grill (which looks like a perfect kettle)... So more than likely i can only get the controller and add it to my weber kettle. I anticipate it becoming popular videos for your channel.

The chili crunch has quite a bit of flavor in it. You can absolutely add more salt to taste 👍

Wow, great looking wings! How long will a load of charcoal last you running 250-275 on the hunsaker?
I’ve had it go over 12 hours at 250.
