Zucchini are vegetables that instantly absorb the smells and tastes of the ingredients cooked with them. This recipe for marinating zucchini will make them look like mushrooms.
Recipe and Ingredients:
Cut 2 kg of young zucchini into half rings.
1 garlic, 50 g coarse salt, 125 g sugar, 125 ml 9% table vinegar.
Mix well.
1 tbsp black pepper.
Chop 1 bunch of parsley and 1 bunch of dill.
Put the greens with the zucchini.
Stir for an hour every 15 minutes to make the zucchini juices.
Place the zucchini in sterilized jars.
Put the jars covered with lids in a saucepan.
Fill up with water up to 4 cm.
As soon as the water boils, bubbles will form in the glasses.
From that moment on we cook for 15 minutes.
Take the cans out of the pot and close the lids tightly.
Put the jars on the lids.
Cover and let rest for 1 day.
after, turn the cans upside down and store them in a dark place.

You should wipe the glass rims off before putting the lids on...there was still vegetable matter on the rims when you set the lids on.

@@perfekterezepte A restaurant has nothing to do with it. Wiping the rim of the glass insures a clean seal with no chance of air leaking in. One wipes the rim with all canning, be it jam, meat or vegetables. Even broth. :)
