    I think I will be making this! I had an italian friend years ago who was like an aunt to me - she had shown me how to make picked veggies and giardiniera - and i forgot! now i can try it again with all the different veggies here. thanks!! -- to be clear i know this is a different technique, but i mean to say i cant wait to try this and return to pickling too

    Hey there 😊lovely recipe as always but I do habe one question. Do I have to open the jars in between fermenting in order to relieve some pressure or should I keep it closed for te whole time? ( I am a little worried that the presure would cause the jar to burst)

    Do I have to open the jars periodically for the pickles like with the sauerkraut?

    I usually roast my beets before I pickle them...Is that not necessary? I don't want the vegetables to be hard on anyone's digestion. :-)
