    Why do you need alfa amilaze enzime, if you have added malt (which containes enzimes)?

    • @dominickcapito4420
      @dominickcapito4420 2 ปีที่แล้ว

      I’ve been researching this a lot. I think you don’t need as much malt if you use the enzyme. The enzyme breaks it up more so more starch the better ABV

    • @BobZed
      @BobZed 2 ปีที่แล้ว

      Why add alpha amylase enzyme and malt? It depends on how much malt and how much adjunct (corn, rice, etc.) you have compared to the malt. Unfortunately, the enzymes in malt are not perpetually useful. If it's a 50/50 mix between malt and adjuncts, you're probably OK, but the closer you get to that mark the more likely it is that you will need to add additional enzymes. Alternatively, you could use six row barley rather than two row. It has more protein, less starch, more enzymes and a thicker husk than two-row. I am kind of amazed at how long the mash is conducted. IMHO, the malt and the enzymes should go in at the same time. Sure, it's slightly less efficient to go for an hour, but way less annoying.

    Is it worth mentioning that distillation is illegal? You can totally make a "corn beer" called Chicha. It comes from South America. To make Chicha, stay pretty close to your recipe and add Philly Sour yeast, because Chicha is a sour beer. No hops.Probably add some water because Chicha is traditionally less than 3% ABV.

    Dont skip on cooking the goddamn corn. I just did that, my og should be 1080 but it was 1040 because my malt enzymes couldnt reach most of the starch. I just hope that since i didnt boil and i am fermenting on the grain, that i can squeeze some more og before distilling

    Bro, why is the mash time so long? Is that because corn is harder to process?
    What about really fine corn meal? Would that also take that long?
    I've watched a few videos and it's the first time I see such a long process.

    Every 100ml got 12gms of Sugar...
    Total water was 35 litres (35000ml)
    So 350 part got 12gms sugar means 4200 gms of total Sugar in it...
    4.2kgs of Sugar in 35 litres water produce how much litres of Alcohol, and what would be the percentage?
    One final question is that if my math above is correct then, is just 4.2kgs of Sugar enough for 35 litres??

    • @NielvanderWath

      35L water to start with. The final fermentation in the bucket is not 35L. And I see his final brix % was 15%, not 12%.
      But if the final volume was 35L at 12% brix, then you would have potential alcohol of 6.4% ABV, meaning there is 2.24L of absolute alcohol available if you could get all of it.
      In reality, you would only be able to recover some of it via distillation.
      But if you could retrieve all the alcohol, you could add 3.36L of water to the spirits and that will give you 5.6L of spirits at 40% ABV.
