I'm not 100% sure on this but the Shadows never believed they could recruit him. But the human agents convinced them to give it a try. Let's face it, if they scrambled Anna's brains by dunking her in a Shadow ship, imagine what they could do to Sheridan (before we even talk about Keepers, etc). Also I think them taking Garibaldi was their main intent. They didn't want to blow up B5, they wanted to turn it to their purposes and use it to sow discord, etc.

I ajways thought a shot from orbit showing the detonation and blast/debris cloud would be way more (excuse the pun) impactful. A silent flaring of unimaginable energies lighting up the black planet. IIRC, Sheridan had 2 500 Megaton fusion bombs aboard the Whitestar. Thats a Gigaton explosion plus whatever the Whitestar contributed...
