the names in AoT are international, not strictly german... its to tie in the fact that "all" races and backgrounds were in the walls. also sawano liked that part of the show, so he made music that incorporated different parts of the world. german lyrics, sung by japanese artists playing classic instruments and modern electric synthis.
also the transitions (the fades in/out) are controlled by the second chair KOHTA YAMAMOTO who is on the keyboard. he's the one that also controls the synths and all the electronic signatures you hear throughout all the soundtracks, also responsible for the majority of the 3rd/4th season's OSTs (which are mostly old OSTs redone/reorganized with his electronic signatures and a few originals ie ashes on the fire/footsteps of doom ) and quite frankly doesn't get the recognition he deserves becauses hes overshadowed by Sawano.
There sadly wasn’t really much racial diversity in the walls, we certainly don’t see much and they make it a point that Mikasa was the last person of East Asian or at least AOT vers. There’s certainly different “backgrounds” (Jean being a French name, “Springer” being traced back to Sweden but having forms in other European counties, interestingly “Armin” being of Persian/Iranian origin making the blonde kid have one of the least white names lol).
