That last drink looks amazing, love it when concepts like a coke float get elevated and balanced into something new and fun! I wonder if using fresh pineapple for the Rompeolas would bring that acidity you were looking for, certainly makes a big difference compared to store bought in my bar experience.
A Cold Brew Giuseppe 45 mls Cold brew concentrate (something juicy I usually use some Ethiopian or something tropical works too) 45 mls Cynar (either proof works) 45 mls of sweet vermouth (cocchi) A bar spoon of Lemon juice 1 dash Angostura Bitters Stir and pour over a large cube in a chilled rocks glass Garnish with a lemon wedge and a sprig of mint Enjoy! I make this at my bar for a shifty 🤝
could be that the crema might be a cause? (I have seen people use syringe method) and they just take a larger syringe and then take the fresh espresso and take the espresso from the bottom into the syringe and leave the crema top and then slowly put it into the bubbly drink medium 😊🤘 I know some use this for espresso highballs/ espresso tonics etc. so perhaps it might help with the over bubbling in your espresso and coke! 😊
Make sure Coke is cold and mixed with ice before you add your espresso. 1) you can add the espresso by dropping on the back of a spoon to your cup 2) remove the crema of the espresso before pouring on coke. 3) cool your espresso before adding to coke. Any of the above should do the trick 👌🤝
