Good morning Chef Jeffrey. I love the color of those ribs on the grill. I also like how the rub remains in place as you’re mopping the ribs. I made some baby backs last night. 9 minutes in the Instant Pot with natural release. They came out great. I've added putting worcestshire sauce on first then a rub. Outstanding!! Then I broil them with BBQ sauce (I use Kraft cuz I got it for $1 for 16 ozs on sale.) I'd love some more detail on how you retain a 250 degree grill. That would be great!

By the way, I won't keep bothering u but this use to concern me so I searched it out. They use to use that same membrane to Incase sausages! Some companies may still do. I do know that other cultures use it, like Italians, etc. U probably knew that right? AND...the ones concerned say the seasoning can't get thru the meat or it's too chewy. Well I saw one chef just cut criss cross slits across it so it still got the seasoning. U and I both know ain't no big restaurant gone take time to pull it off a large quantity of ribs! Ok I'll let u be now!😂 God bless

Chef Jeffrey I must say you got mad skills on that pit. However I have the same offset grill and I use Hickory mini logs that I buy at home depot and Walmart and they are the perfect size for our fire boxes on our Chargriller pits. Just giving you some food for thought

I add a little wood as I need it to maintain temperature

Just make sure you place the fire on half of the grill away from

Do you have fire under your ribs or do you have the fire in the small side of the grill
I always cook with the fire on the side. Never on the bottom on my meat
