From the foothills of the Appalachian mountains, and no one anywhere in our area ever put cream cheese in it when I was growing up (and don't know any who do now). Don't know if this originated when a chef decided to add it and thus up the level of the standard recipe, or whether that's just the way it's always been in different areas of the South. Nonetheless, I consider any recipe that includes cream cheese to be a "cheese spread with pimentos," while the basic combination of grated cheese, pimentos, mayo, and seasonings (if any) is "pimento cheese." Not trying to be negative or derogatory, just stating facts about differences.
Well I’m from West Virginia and we make it with velveeta cheese. But I’m gonna try it your way
We eat our pimento cheese on crackers at family gatherings .
Sometimes on a half a sandwich .

Yum I love pimento cheese but never made it myself…believe you me I will now! I like it both ways but most often as in a sandwich thank you so much
