Being Italian, we were told not to add any oil to the boiling water; the reason is that oil will coat most of the pasta and it will make the sauce very hard to actually “stick” to the pasta. I only add oil to the water when cooking lasagna sheets (either fresh or dry). That wil be because the oil helps the sheets not to stick.

Pro tip: add a tablespoon of baking soda to your pasta water before adding your pasta if you're using Italian style noodles for Asian dishes. The alkalinity of the water gives them a similar profile as actual Asian style noodles. Tastes just like the lo mein at your local chinese buffet, i swear.

If you don't twist you are just dropping it in the pan. No spiral at all. And its true, do not add any oil. Sauce won't cling to the pasta. I started cooking at 6. I'm 75 now. I know one or two things.😅

Just a couple of suggestions from an Italian. -You don't need to put oil in pasta water, just keep it moving enough before it returns to a rolling boil and the pasta won't stick -Strain the pasta a bit before it cooks to "al dente" so that when you mix it with the sauce it finishes cooking perfectly Other than that, I've got nothing to say, it was a pretty good dish.

@Falahola316 No because the oil and water stay separate cause they have different consistency. So the oil doesn't help the noodles in any way. If you don't want them to stick I suggest stirring them every once in a while

@ I love it! Only temporarily will the oil come in contact with the noods. Water and oil repel one another, water is denser, as well as a higher surface tension. What’ll happen is some of the oil will briefly *stick* to the noodle, but once the noodles with oil hit the water, the water will *absorb* into the noodle and the oil will float to the top of the pot. Water will/can absorb into the noodle, but oils will generally only coat the noodle at normal cooking temps.
This is just my preference, but Barilla always seems like trash to me. They're extremely yellow and don't have any of the flour/starch om there that helps make the amazing pasta water. But again pasta should be yellow like that

My mother in law was Sicilian, and she said that she never heard of Italians putting olive oil in the pasta water, but that sea salt is mandatory. It makes sense to me, because oil might cause the pasta to become less sauce absorbent🤷🏻♀️
The oil on top of the pasta water breaks up the starch bubbles to prevent boiling over. You can use a wooden spoon across the top traditional style. The oil on top is mostly for the lazy so they don't have to think about it.
A lot of people also think one should add oil to prevent the pasta from sticking together but it indeed isn't necessary. First oil floats so you won't really coat the pasta. Also usually pasta won't stick unless you cooked it for too long or left it to cool all clumped up for too long
I've made Asian dishes out of spaghetti/linguini, and I've made ramen, added red pasta sauce and topped it with grated Parmesan cheese (sometimes browned meat too). Delicious! It's pointless to add oil to your boiling water with the pasta. It just floats on top, then goes down the drain. Be sure to reserve some of your pasta water before draining, as it will thin out a sauce that's become too thick.
