Always leave stability control on for safety reasons. When going off-road though, that is a different story!

If you know how to maneuver and handle the sliding, you should be fine with it off on low speeds. You should always have it on at least on high speeds unless you are on a dedicated race track and are experienced enough to slide around bends. Really though, It's best to have it on all the time. The only reason there is a disabling function is for either if you are stuck in snow and don't mind a little slippage in order to get unstuck or want to drag race (in an open and non-public traffic space). ;)
