    I researched to death the perfect non dry turkey burger today. I utilized a few different ingredients from some suggestions on other videos and then I cooked the burgers exactly how you suggested. Cold pan with oil and let the burgers begin to sizzle before covering. They were amazing!!!! The juiciest burgers I have ever had. I mixed 93% 7% Turkey with salt, pepper, minced onion flakes, and fresh minced garlic. Added Cajun seasoning, Worcestershire sauce, parsley and two Tablespoons of mayonnaise. Mixed gently and then formed into four patties. Placed on parchment paper and refrigerated for one hour. Absolutely spectacular. The last minute I added a slice of pepper jack to each. Thank you for your cooking suggestion!

    Guys, I prepared your recipe tonight w a few modifications. Instead of soy sauce, I used worcestershire sauce. In addition to the other ingredients I added one package of dry Lipton Onion soup mix. The burger was AMAZING. Thx to you guys I have a new recipe to add to my weekly meal prep list👏

    My turkey burgers have never been dry. I make mines homemade and I add worchestershire sauce, soy sauce, and my secret ingredients a pack of lipton onion soup mix that I mix in a half cup of warm water and I add 4 tablespoons of melter butter. I've never added baking soda, bread crumbs or gelatin. Good looking burger though and I love the avocado slices added to them. Maybe I'll make some turkey burgers ths week.       Hi imari! You know Lipton Onion Soup Mix is good, but their onion and mushroom soup mix is "da bomb"! I routinely add 1 entire package of the stuff to 1 lb of ground turkey. Take note, however, that this Lipton product is addicting, and you will never cook ground turkey, chicken or beef without it again! Trust me! But, low salt or similar friends need to be concerned, because this stuff is not only good, it is salty! Happy cooking, everybody! Please get vaccinated!

      I've made burgers plenty of times using onion soup mix. Lipton rightly calls them onion burgers in their recipe because onion is the predominant flavor. They're good, but this recipe is much better in my opinion because there is not one flavor or ingredient that overpowers or stands out. They've captured the perfect balance of savory flavor. What I love about ATK is they don't just arbitrarily recommend an ingredient or technique; they are literally a test kitchen, so that's all they do is keep trying and tweaking recipes until they find a perfect balance of flavor. And I love that they explain why they've developed a recipe a certain way. But I do understand that many cooks prefer to cook the same way they've always cooked because that's just the way they've always done it.

    Saw this in cooks several years ago and hadn’t tried until today. Made it with no modifications to ingredients but I cooked in a tin lined copper sauté pan as I don’t have a non stick big enough. I found cooking times needed to be a little higher using “medium” but checked with my instant read. Brilliant. Juicy, flavorful, and taste more like turkey than any turkey burger I have ever had. They don’t need onion or garlic. Let them shine with just the soy sauce and Parmesa.

    Wow! Amazing. We watched, We cooked, We ate! So delicious! That being said, as WW members counting points, we did “skinny” the recipe just a tad by using a lite butter and reduced the parm to only 1 T. We were able to drop 2 points per burger. Plus no bun - used one toasted Ezekiel bread slice and ate open faced. And no cheese. Still so yummy!

    Becky & Bridget! You guys made the best Turkey Burgers I ever had!!! Honestly never liked Turkey Burgers (completely tasteless) in my life. I don't really know what magic ingredient Becky included but it made all the difference!!!!!! Thanks to both of you! This is now "SAVED" in my 'CLASSIC DISHES' TH-cam sub-files. (Only about 5% of dishes I've tried have made the cut!)

    The only turkey burger recipe I have ever tried from you guys it's found on your site, and has a lot of Panko bread crumbs, and a fair amount of Monterey Jack cheese. But this is a very different recipe, and I'm anxious to try it today. Should be interesting to compare.

    These are the best turkey burgers I've ever tasted in my life. Texture is perfect. We had to add about an additional 1/2c of bread crumbs to get them to hold up (this was 3 pounds of turkey).
    I never would have thought to start the burgers in a cold pan.

    I made my first batch and came out as advertised! Not dry and very juicy. This can make a nice base to make turkey sausage with the right spices. This will be a staple.

    This will make it taste amazing, but the easiest hack is chopping mushrooms and mix it with the turkey. the mushrooms melt ( not sure how to describe) and it makes the turkey moist without changing the taste

    I made these for an elderly friend so they'd have some pre-made meals; after I tasted one, I had to make another batch for myself and my cousin. He said what I was already thinking: I may never eat a regular beef burger again! Just made them again tonight for dinner, but we just had them with juicy slices of tomato. They're so delicious and savory that they don't need the extra fat of cheese or avocado in my opinion. And they DEFINITELY don't need any condiments.

    The recipe is good; I now Have to put in gelatine!
    Here in England, they put their fingers on the scales by adding too much liquid!
    If nothing else it will hydrate the gelatine and I might now, with the addition - of a little more - baking soda, get something that came off the bones.
    Thanks for this recipe, it will be a welcome change for me. Our house doesn’t do turkey at Christmas, so it can be my own meals.

    I have to make turkey burgers all the time, fam won't eat red meat 😫. I use 85/15 or 90/10 through some spices in. Then put some butter or olive oil in a cold skillet throw the burgers in wait until juices run clear, about 7-13 min. depends on thickness and heat. Juicy browned turkey burgers and no complaints from my weird fam. I sneak off to five guys nomnom.

      I agree, with danette! They make great burgers at the Five Guys. However, I do not understand the comment about 85/15 and 90/10! Ground turkey is not lean labeled in my grocery store. Is this common outside upstate New York? I''d appreciate learning more about this!

      @@michaelsalmon6436 for the fat content it can be tough to find on ground fowl but if its pre package like ours is Shady something its just above the brand name. Other times I've seen it on the weight/price tag, like with beef...yum!

    I've never had a bad or dry turkey burger but then again I've always made them homemade. I've also never used the baking soda or gelatin or even eggs because I'm allergic to egg whites. The only thing I've ever noticed is that it doesn't feel heavy in my stomach after I've finished eating and I've never regretted making a turkey burger. I think the main point is to not overcook it and use good fresh toppings. If you want to be health conscious skip the cheese and mayonnaise and use lettuce tomato onions I would always trade LTM over Mayo or cheese for flavor.

      Totally agree. I use Turkey in bolognese instead of beef. Can’t taste a difference at all. With the tomato, it gets a rich umami and meaty taste. Indistinguishable

      Turkey burgers are so delicious, homemade that is. I did find a local eatery that makes them; they're to die for, but at $15 each, without fries, I only buy them when I have a wicked craving.

    Another way to guarantee a juicy turkey burger is to not cook it to 160 degrees. You achieve the same food safety result (7-log^10 lethality) by cooking the product to 135° and holding it there for 37 minutes. Sous vide machines are cheap and do wonders for poultry

    When I make chicken burgers, I add a loaf of sandwich bread that's beeb soaked in milk and some cream cheese. All you can taste is the chicken.

    So I have been a long time follower of you guys since 2000, and I noticed that on your site, you have quite a few variations of turkey burgers. There is another variation that I picked up, a couple years ago, that uses a mixture of panko bread crumbs, mayonnaise, and shredded monterey jack cheese, that holds the burger together, and in my opinion, makes a really good turkey burger. This variation, which I tried for the first time last night, which rather disappointing. The main problem was that I never really got a crisp exterior at all, and the soy sauce, which I measured down to the graham, made the burgers too salty. And I didn't even add the additional salt and pepper, that you guys do in the video. I believe this version of turkey burgers is vastly inferior to the other version I mentioned above. I'm not likely to make this one again, because it just didn't turn out all that great. In 25 years, almost, of being a loyal devotee to your mission and your whole crew, this is maybe the fifth time, ever, that I have been disappointed in a recipe. Considering the hundreds of recipes of yours I have made, that is a phenomenal record.

      I just learned about this from watching Asain cooks. Baking soda coats the lean meat, so it acts like a barrier to keeping moisture inside. If you've eaten Chinese food, you'll notice how tender the small chunks of beef or chicken are in their fried rice. I don't know if it's used on fatty meat. Probably, not.

      Hi Grateful! Me thinks that any cheese will work! but if you cannot tolerate any type of cheese (sad!), then try sweet relish juices ! Start with 1 tablespoonful, then add more if you cannot taste it. Oh, and do not forget to add the sweet relish as a topping for your turkey burgers. And, bacon, too, of course!

    If I grind my own turkey, does it matter how much dark meat is added to the breast meat?

      I would assume only the fat content matters. This video suggest 93 percent. Dark meat typically has more fat, so i assume you'd want to ad more dark meat then whtie meat but don't quote me!

    Normally I'm a big fan of Becky Hays' recipes, but ... wouldn't it would be healthier, easier (and probably tastier) to make a simple burger out of 85/15 ground beef than to add a bunch of cheese, butter, breadcrumbs, more cheese and avocado to ground turkey? They do look delicious though.

    Here's my foolproof way to make great turkey burgers:
    1.) Toss the ground turkey in the trash where it belongs.
    2.) Make a burger using beef, as God intended.

      Hi Captain! Thanks for your comment. BTW, God also invented bacon! A great topping for both turkey, ground beef, and even salmon burgers. Hell, God tells me that he/she often adds crispy smoked bacon slices to his/her Grilled Cheese Sandwich (when old Saul isn't looking!) Happy New year!

    If you want to taste something mind blowing, try turkey kielbasa, split down the middle BBQ'ed & drenched in good old Kraft BBQ sauce, it is a food version of crack, & people will over eat it making themselves sick, ODing.

    If you have to do THAT much to turkey to make it appetizing, why not just cook a beef burger? This can’t be healthier. You’re adding bread, butter, cheese, and gelatin.

      This is about as healthy as a Quarter Pounder from McDonalds. It's very high in fat, cholesterol and sodium.

      Changing the meat isn't gonna suddenly make mayo appear... If you want mayo then just add it.

      Avocado is creamy and has a fair amount of fat - that replaces the mayo in this version
