- We're pulling Alirio Ortega's stunning pink bourbon on espresso. Highly grown Colombian coffees can be difficult to balance but some small tweaks go a long way to bringing out the stunning flavour of these coffees in an espresso format.

Really awesome and thorough video!! Love that you guys take the time to make these! What is your in-shop recipe like in terms of temp, pressure, PI, etc for those of us with more capable setups :D?
Thanks! Happy you enjoyed it. We like smaller coffee doses because of the higher yields so there isn’t too much liquid espresso at higher ratios. We experiment with 12 and 15 gram baskets and pull coffees 2.5:1 to 3:1 depending at 6.5 bars of pressure. Depending on the coffee, the smaller dose let’s us drop our group temperature by a few degrees as well. We also preinfuse for 5-7 seconds. Hope that helps :)

One question, which 12g baskets do you guys use? Are you using any competition baskets or simply using the slayer ones?
@@hugoirm for 12g we use the Kees van der Westen baskets. Hoping a vst or similar eventually comes on the market but, not holding our breath, ha
