  • We're taking a look at the reeeal pretty new coffee brewer from our friends at April Coffee.
In this video, Giuliano uses some characteristics of the April brewer to revive an all-but-dead erstwhile deliberation around extraction. While we adopt a "the higher the extraction the better before astringency" approach to brewing on bar, we're always experimenting with different approaches that change balance, foreground particular flavours or accommodate equipment limitations.
You may have wondered why people clam to achieve a decent tasting french press while grinding so coarse despite the lack of agitation, or why ristretto shots still have a sweet spot. Granting this method can be particularly advantageous if you have a grinder that producer "lots of fines" or are using slightly more developed coffee, have a watch, give it a try, and tell us what you think.
Here's some reference material to dig into some of these concepts further:

Nice. I started this week using the April Brew with a light roast and had some difficulties to get the sweetness. Will give this a try.

Would you say higher than 30 clicks on a Comandante?

For light roasted coffee I'm in the 27-30 clicks on most coffees at this recipe
