our dandelions are done now, but we have a neighbor that never puts fertilizer on their yard, I will have to ask if I can have some of their dandelions next year to make this. Maybe save a glass maple syrup jar for it too. Thanks for sharing this!
I have never tried it but I would think yes! You may have to adjust the sugar amounts though depending on the type of pectin to ensure it sets properly.
Wouldn't that be better to make the syrup without honey and use only sugar? You can add the honey after it has boiled and reduced and has cooled to a temperature below 50-60 degrees Celsius in order to preserve the medicinal properties of the honey.
Certainly could try it that way yes!! I'm getting another batch on soon so will try it that way and see if there's any difference in consistency but totally agree I do love to preserve those great qualities of the raw honey!
