Fast and Furious Fishing - the punters were hovering back in a huddle at the cabin door area waiting for their hookup - wide eyed and optimistic. A dish without fish sauce is less than it could be . Fish sauce is one of the great condiments whose alchemy adds a subtle flavour layer and tang to almost any dish. It blends in so well if not over done. You did a great job of thawing the skipper and he was almost chatty - strong silent type . Fishing haiku for you. Heroic salmon run, the skipper focused and stoic, the flesh so slick. Not sure I hit the 5 , 7, 5 ratio but its close enuff.

Will, looks like you guys had a great trip! I stayed at Clover Pass for almost 2 months and had some awesome fishing adventures with friends we made at the campground. We lived there on the island for three years and I can honestly say Ketchikan has been the best fishing, crabbing, and shrimping location I have ever been to. Keep filming these great adventures and recipes. Steve

@@CookingWithClams I truly enjoy your video's, especially the ones on Long Island. I grew up in Maspeth Queens and spent many years crabbing and fishing in the back bays of Moriches, Montauk and Shinnecock. Don't get to do that here on Lake Erie in PA.

Yummy, love salted salmon (in Sweden we call it “rimmad lax” and is often served with creamy stewed potatoes with dill) .
Alaska, a beautiful, amazing place with healthy seafood- envy you that trip, fantastic fishing!
Some Fun Fact: when making pickled herring it starts with a barrel with salted herring from Iceland; big and fatty - it need to be unsalted in cold water overnight, but you probably knew that already…always fun to watch you cooking, Will 💚

Awsome place for sure . I have family on kodiak and in homer. We go about ever three yrs and i wack and stack em. Bring home several hundred lbs of salmon , halibut.scallops and crab.

I think you could of cured in salt longer with no worries, however, I would of gone lighter on the fish sauce to compensate, just my two pennies worth.

Alaska is indeed a beautiful place. A bucket list destination for sure. I fly into Juneau and hitch a ride via seaplane every year. Destination is the Tanaku Lodge in Elfin Cove. I am interested in your Halibut recipe. We enjoy a macadamia and/or pistachio blend with panko encrusted on halibut. For such a bland/fluffy white meat fish the enhancements are vital for flavor. #Watching #Waiting #Halibut

I've never used that much fish sauce on one dish in my ...lifetime: plus ,I've always used it in a cooked dish; never thought of eating it straight outa the bottle,so thx for that - didn't kno you could or should. Question : After you open the bottle, how long does that stuff last in the fridge ? After a while, I usually just go get another bottle, cuz I'm never sure.thx.
I may have been a bit generous on the pour but look up Nan Jim recipes for reference. I don’t even refrigerate mine, just in the cabinet, I use it a lot so it isn’t in there long

that was beautiful! But I am sad you didn't get to specify whole fish! over here in Philly the Asian markets sell the heads and racks for a tidy sum, as people use them for stock and other things. I also make Lox out of coho, it's a beautiful fish...
