My first hail ride was crazy. It was humid and around 40 Celsius. I climbed a mountain fast and suddenly coming over the top it started rain hard and hail due to the elevation change .... crazy as coming from Chennai I really did not know what rocks were hitting me...

I grew up in Kathmandu, and I think it's one of the most underrated tourist destination. While Nepal is full of natural attractions, Kathmandu is full of cultural wonders..!!
From the point u were, Everest was less than 200km. You could have taken a left turn from a little ahead and a fine road goes to the Solukhumbu district where Everest is and can be seen . Or you could have taken a different route 100km before you got on the east west highway and rode about 150km and could see Everest clearly. Everest is actually visible from the hills of Kathmandu Valley.

Very doable. I would skip staying in Beni and ride further to Kalopani though. It's where the beauty of Mustang begins. Maybe you could stop off at the hot springs of Tatopani on the way back too
