    LEARN HOW TO IDENTIFY PURE TIN VESSEL AND LEARN THE CORRECT WAY TO USE THEM.
    What are the benefits of cooking in eeya chombu? Is eeya chombu good for health?
    Eeya chombu rasam is a unique dish and has been part of South Indian traditions for very long time. Speaking to few grand mothers who explained the authentic #rasam taste is derived from making it in the “Eeya chombu” and nothing else, got us excited to search for the makers of this unique vessel. Our Journey took us to Kumbakonam and Mayavaram region where walking across streets for hours and asking many shop owners helped us identify the original makers of these products. Unfortunately there are only three artisans left who knows how to make these vessels. Our sole objective is to make this vessel part of every house hold before it becomes “Antique”

    Tin is one of the best metals for cooking. That is why we use to do tinning work inside of Brass utensils. Brass being made of copper has best heat conductivity but it reacts with food so our ancestors use to do tinning process. It provides best of both. Copper for best heating all around and Tinning for making any food inside which won't react. Thanks for making this video. It helped me clear many misconceptions.

      Kalchatti works on electric stove as it as a flat base. Eeya chombu also does, but due to curved surface transfer of heat may be delayed.
      As regard to induction, concept of induction stoves is that it works on steel and iron products only.

    Is Cooking food in tin, tin coated brass or copper cookwares good for health??

    • @Zishta
      @Zishta  4 ปีที่แล้ว +2

      1) Tin vessels are mainly from a traditional perspective used for making rasam. Some people do make payasam or boil milk in it or set curd. 2) One can cook in tin coated brass vessels. Ideally if you make anything citric based on this, it would be best to transfer the food to another vessel after cooking 3) What we have learnt so far is that cooking is pure copper is not advisable.

    • @Zishta
      @Zishta  5 ปีที่แล้ว

      Induction as a concept will work only on cookware which has Ferrous material in it (Iron). If you are asking about hot plates (Heating Coils), it works on that.

    • @gnostaoticanarchangautand
      @gnostaoticanarchangautand 4 ปีที่แล้ว

      @@Zishta copper works on induction though... it makes an elecromagnet and heats it up, i think tin works but a lot slower.

    • @Zishta
      @Zishta  4 ปีที่แล้ว

      @@gnostaoticanarchangautand When you say induction - are you referring to hot plates with ceramic top for uniform dispersion of heat? If that is the case, all material including kalchatti will work. An Induction stove works on the principal of electro-magnetic eddy currents which generates heat and the primary medium where eddy currents can be generated is where the cookware has magnetic properties (prime requirement). Hence cookware with predominantly ferrous material (Iron, steel) can generate eddy currents. Copper as metal do not have magnetic properties. Tin is a very weak para-magnetic properties hence it would be really slow to heat up in induction stove. Hope this clarifies.
