The "refried beans" was genius. I cannot eat jalapenos so I would sub green pepper. I don't have any tostada shells but I have some hard shell tortillas that are too brittle for filling. I think I would break them in half as best I can and use them for tostada shells.
I might remove beans, then add worstershire, a tblsp of sweet relish and 1/4 c ketchup to make a spicy sloppy joe and eat on a toasted slice of my husband's homemade honey wheat bread! Thanks for the deconstruction 'idea'. Glad your're on the mend, too!😊

You have the patience of a saint. I would have taken the lazy mans way out. Get a strainer and strain the liquid for my rice and then put the meat and beans on bottom. I'd add green bell pepper and no jalapeno lol... It does look really good though.
Thank you! I didnt want to freeze the leftovers (which is usually what i would do), and I for sure wasn't going to throw them away. I don't eat bell pepper very much. I got sick eating it one time, so I usually use jalapeños instead☺️

I put my meat and beans in a colander, run water over them and pick the beans out. Lots easier to to tell everything apart. Ask me how I know😋
