For those saying this is unhealthy or that they used too much butter please realize that they likely made a bulk batch of clarified butter to be used over the course of many weeks and that the steak itself isn't going to soak up all that oil, the bread however will... so that is unhealthy. Also clarified butter is a bit healthier than normal butter given the milk solids have been separated from it. It's not as bad as it looks, everyone is exaggerating the unhealthy factor. (Source: I'm a certified chef and we would make large batches of Clarified Butter in culinary school just like this.)

Dude butter is not even bad for you. This whole thing about the heart attack with fats from butter or red meat or cholesterol is just bollocks. Also, you're not drinking the butter. You're not getting that much more butter than you would otherwise. In fact, you actually probably get LESS butter in the bread then if you spread it, since spreading lukewarm definitely puts more butter than dipping in liquid butter, at least when I've compared them myself.

Get it to 115 degrees then melt some butter in the pan over low heat with the steak, basting it constantly until it finishes to 130 degrees. Then put it in a wire drip rack and put the pan grease on top. Cover and rest for ten minutes or until it hits 135 on the nose. Chefs kiss.

And the heat was way too high You never want a rolling boil in that process. I understand it's hard to regulate temp in such a big batch and I also understand time is money but you really don't ever want to blast the heat during that part of the process.

Also, you're not drinking the butter. You're not getting that much more butter than you would otherwise. In fact, you actually probably get LESS butter in the bread then if you spread it, since spreading lukewarm definitely puts more butter than dipping in liquid butter, at least when I've compared them myself.
