I am going to add my oven dried habenero flaes from last year to this tomato jam and some of the cowboy candy i made with mix of carolia reaper/ghost pepper/habernero to spice it up. i will make your rosemary bread and i am sure it will be ymmy. you jam looks delicious. thks for a lovely video. I was introduced to tomato jam because of an Irish pub by where my grandparents live. I couldn't find any recipes where the end result looked right until this video.
So jazzed to learn I can make jam without pectin powder! Wonder if I could use up some of my tomatoes and jalapenos together in this or would the peppers make it NOT thicken. Small batch time!
It wail very depending how how much moisture is in the tomato’s. You want to be stirring constantly and when you can begin to see the bottom of the pot as you stir you will know it’s ready. Thank you for asking.
Since tomatoes can vary in size I used grams to get a more accurate measurement for the tomatoes and sugar. I would definitely try using powder ginger but I would probably use half the amount or a little less. Thank you for your feedback.

Thanks for asking. 30-45 minutes. When you are stirring the pot you want to be able to see the bottom of the pot for a split second. The time will vary based on the moisture content of the tomatoes. Or let it cool for a bit and if you’re not happy with the consistency of it put it back on the heat and continue to let it simmer for another 10-15 minutes. I found this on google. If a recipe calls for 4 cups sugar, use 2 cups honey. Cook the jam or jelly slightly longer than time stated in recipe using sugar. When substituting honey, use a commercial liquid or powdered pectin. It’s seems that you can make this substitution. Let me know how it turns out for you.
With so much liquid i don't think adding more water in the recipe is necessary since you need to get rid of the liquid by evaporation. Thank you. God bless you
