They're actually less for height and more to cushion the blow of landing. It's a surprisingly firm yet giving surface, and far kinder to your legs than even a padded mat. High quality ones are also annoying to replace, and can't really be moved around like a padded run would be. You basically have to disassemble the whole thing.

I wish someone would tell the athletes to smile at the end of their routine...don't give the judges any ammo. Smiling is a positive thing to do as opposed to shaking your head in disgust or sullen...it's just psychological.

Yup. Springs underneath with usually some type of plywood and rubber foam on top.
Typically they would use rods for a tumbling track.
