As a Barbadian born in NYC, I was raised on coconut bread. my grandmothers and a great aunt who made them have died so I have not had coconut bread in 30 years!!!! Well, I am eating it right now thanks to this channel!!! It’s delicious warm. I always got them cold and hard. I used to eat thes with hot tea. This recipe was filled with coconut. I am low carb so I used almond flour and 1/4 of powdered protein. Mine are golden brown!! The coconut bread of my youth had more of a white look and they were hard. This is fabulous. THANK YOU!! I have subscribed!!!
These are 10/10 👌🏼just came out of the oven and it’s soo good warm ! Crispy on the outside and soft on the inside - it’s not too sweet .i used real coconut as I never know what to do with the husk when finished cooking and I used raisins instead . Thank you so much for this recipe- I’m never buying this from a bakery again

I made this last night & baby let me tell you - it was DELICIOUS !! So good - I added a half tsp of cinnamon and some nutmeg plus a splash of milk, also added some chocolate chips to some but the raisins were much better - so quick and easy, thank you !

@@jehanpowell yes that very afternoon i tried your recipe although two things i did differently....I replace the coconuts with powdered milk and i add more essence but less than 3teaspoon of almond.....I dont have vanilla essence....I double your recipe because i was making for myself and family....However i felt like i ate the best buns in the world....

My household and I don’t eat egg so I substitute milk for most recipes. For this one I do 1-2 cups of milk. It comes out slightly different with the texture but the flavor and deliciousness is still there. Thank you for all of your recipes ❤️❤️

I make coconut buns for every occasion that I need to make something... for Guyanese Hindu Wakes it is usually vegan so instead of eggs I use Burds custard powder and a bit of milk for a vegan option for Hindu wakes! But for other occasions I make it your way and it is super easy! Thank you Jehan for your recepie.... I also use cranberries instead of raisins as my son amar doesn’t like raisins but I will try currants and see if he likes currants as another option! Thanks again

Without the Coconut and with the Fresh Grated Coconut its call Coconut Drops we put Raisins or Currents But Please don't forget a little grated ginger a little cinnamon. Some grated Nutmeg about 1/2 tsp each and don't forget a touch of Angostura Bitters . Flour. Sugar and B/P. According to How Much you want to make.

In Trinidad it's called "coconut drops" or "rock cakes". And we always use the freshly grated coconut flakes.
My nana made these here in England always called them Rock Buns I loved them
