Casinos and resorts have partnerships with stadiums, venues, clubs, restaurants, etc. so they don't win or lose anything by giving high stake gamblers a VIP treatment but they do it because they want gamblers to stay as long as they can in the city, they want to make sure there's nowhere in the world they could potentially have more fun than Vegas (they even go as far as giving out free private jet flight for emergencies as long as it's a 2 ways trip 😉).
The reason why they do this is because you might be up millions throughout your trip but all it takes is just 2 hours of bad luck, maybe you're drunk and don't think straight, maybe you're frustrated, whatever it is but you end up losing all your winnings and some more. That's when the house is collecting the investment.

Take it from a habitual gambler who’s gambled all his life.. it doesn’t matter how much you make or how much you win, as long as you gamble repeatedly and it becomes a habit you’ll never earn enough money, the well eventually runs dry.
