  • Crispy Bolster-pillow Tofu
    Today’s menu is one of the modern snacks from Bandung, that is “Pocong Tofu”. It’s filled with spicy chicken and vegetables, and uses hollowed tofu with an oval shape. It’s kid’s favorite snack, the chicken is spilling over, it’s really delicious dipped in your favorite sauce.
    For those of you who want to try, here’s the recipe, hopefully it’s useful.
    Ingredients
    The Main Ingredients

    16 pieces of Rectangular Tofu.
    Ingredients for the Filling
    100 g Bean Sprouts, to taste;
    120 g Carrot, coarsely grated;
    200 g Boneless chicken breast, boiled and shredded;
    2 stalks of Scallions, chopped;
    2 stalks of celery, chopped;
    1 tbsp Oyster Sauce;
    ¼ tsp Salt;
    ½ to 1 tsp Beef Broth Powder, to taste;
    1 tsp Sugar;
    ½ tsp Pepper Powder;
    ½ tsp Ground Nutmeg, optional;
    Ingredients for the mashed spices (for the filling)
    4 Shallots;
    4 cloves of Garlic;
    1 segment of Ginger;
    15 pieces of curly red chilies, to taste;
    12 red cayenne pepper, to taste.
    Ingredient for the Tofu Coating
    Ingredients for the Wet Flour
    165 g Flour;
    ½ tsp Baking soda;
    1 tsp Oregano, to taste;
    1 tsp Curry Powder, optional;
    1 tsp Broth Powder;
    About 250 ml of Cold Water.
    Ingredient for the Dipping Batter
    2 L of Water.
    Ingredients for the Dry Flour
    500 grams of Wheat Flour, replaceable with Bread flour, you can mix wheat flour + bread protein with a ratio of 1:1 according to taste;
    50 grams of Cornstarch, optional;
    1 tsp Broth Powder;
    3 grams Garlic powder.
