    도토리묵은 젤라틴이나 다른 어떤 재료도 추가하지 않고
    그냥 물만 섞어서 약한 불로 천천히 가열해서 잘 저어주면서 만듭니다.
    순수한 도토리 전분입니다.

      교수님이 아시게 조금 더 자세히 말하면
      도토리를 갈아서 물에 넣고 장시간 두면 아래쪽에 녹말이 가라앉고 이 녹말을 물과 소금과 참기름을 넣고 오랜시간 끓인후 식히면 도토리묵이 되는 것입니다.

    와우 저의 고향이네요 달궁계곡이 상류쪽이라 현지사람들도 많이 가는데 잘가셨네요 ㅎㅎ 물좋고 산좋고 음식좋고 제주도 흑돼지가 많이 유명하지만 지리산 흑돼지의 털있는 비계부분이 쫄깃하고 맛있어요 이렇게 영상으로 봐서 너무나도 반갑네요 고맙습니다❤

    아래 다른분도 쓰셨는데 도토리묵은 젤라틴을 넣어 굳히는게 아닙니다. 도토리의 전분과 수분을 적당히
    조절하여 묵을 만드는 것입니다.

    5:17 제가 전문가는 아니지만 도토리묵을 만들때 젤라틴을 넣지 않습니다. 처갓집에서 직접 만드는걸 봤는데 산에서 채취한 도토리를 잘 씻고 물에 불리고 갈아서 건조해 놓았다가 요리를 합니다. 가루와 물을 정해진 비율로 섞고 잘 끓인 다음에 식히면 도토리묵이 됩니다. 젤리같은 질감때문에 서양에서 젤리를 만들때 처럼 젤라틴을 넣어서 그런 형태를 만든다고 생각 하셨나봅니다. 젤리는 젤라틴을 첨가해서 만들지만 묵은 식물성 녹말을 끓여서 만드는 음식이랍니다.

      Isn't gelatin made from animal products or seaweed? I am honestly curious. Anyway, I did not know this. I assumed all jelly food included gelatin. It is a good lesson for me. Thank you!

    도토리묵 만들때 도토리묵가루:물 = 1 : 5 정도 해서 소금 조금 넣고 끓여서 만드는데 젤라틴을 넣어서도 만드는지 처음 알았네요. 😊

    오스틴님 영상보다 보니 도토리 내용이 나오는데, 설명이 잘 못되었어요. 한국에서만 먹는 도토리 요리들중 재료가 되는 도토리는 그 도토리묵은 오로지 (도토리, 물, 불, 시간) 으로 묵을 만듭니다

      Yes! I have never made it before. I thought that any jelly requires gelatine. But it must be natural. I had no idea! I love that I am still learning more and more as I post these videos. It reminds me that I am a student here, not an expert. Thank you for your explanation.

    교수님 도토리묵은 젤라틴을 절대 넣지 암ㅎ습니다. 도토리의 전분을 물네 7대1 정도로 오래 조려서 천연의 젤라틴화 한것이죠

    더덕은 순무에 가까운게 아니라ㅡ인삼에 가까운겁니다
    사삼이라하지요
    한방에서. 열이맗은 사람은 인삼되신 더덕으로 처방하지요
    좋은것은 반찬으로 먹을수있고 약으로도 먹으니 좋지요
