    About bakeries:
    Just to deepen the information about bread, cakes and bakeries. In Germany there are two types of bakeries. The first, normal bakery specializes mainly in bread and buns but also simple pastries. Here you will find, for example, the "Berliner", "Rosinenschnecken", marzipan croissants, simple cakes such as "Bienenstich" and strawberry or other fruit cakes you can see in this vid. These are run by a master baker.
    However, there are also "Konditoreien" which are specialized pastry shops that have special education for cakes, tarts and other fine confectionery. They can also sell bread and buns/rolls, but this is more of a side business here. These shops are managed by a master confectioner. Here you will find the best high quality cakes, tarts based on their training. Are these the best cakes in the world? A matter of opinion, there are very good tarts, cakes and sweets in Austria, France and also Italy, but the latter are often very sweet. This countries also have the profession of master confectioner and overall, there has been an intensive exchange of craftsmanship between these countries for decades. Konditoreien or pastry shops also often have a fine café attached just to enjoy the delicacies on the spot. Just the right place for "Kaffee und Kuchen" (coffee and cake), the German way of "tea time". ;)

    "Plunder" cakes are mostly thought as finger food, but you get sticky fingers from them. Same goes for Berliner Pannekuchen (which are called Pannekuchen in Berlin and Berliner in other places). They are a kind of Krapfen or Kreppel, baked (like doughnuts) in scalding oil or lard, not in the oven. Krapfen come in different shapes and can be made from yeast dough, quark dough or choux pastry. The varieties from yeast dough (like Berliners) or quark dough (Quarkbällchen = small quark balls) are mostly available during carnival time (which can in some regions also include the days between Saint Martin's day (Nov 11th) and the first Advent Sunday). Many bakeries make special offers during carnival time, but some traditional people do also traditional jokes like filling one out of seven Kreppel with mustard and one out of eleven with a button.
    A Zimtschnecke would be filled with some cinnamon, but the base is mostly hazelnuts. There are also other "snail" varieties, but in most cases the brown parts would be based on nuts of some kind.

    The rating system in germany is from 1 to 6
    1 - sehr gut
    2 - gut
    3 - befriedigend
    4 - ausreichend
    5 - mangelhaft
    6 - ungenügend

      And 0 to 15 in grades 11 to 13. And you don't have decimal places, only plus and minus.

    Great video guys, the pastries looked delicious. When you were showing the pastries up close to the camera, it looked good enough to devour through the screen. Very interesting hearing about the German grading system and that it is exactly opposite of the USA.

    Like others said - German school system has grades from 1 best to 6 worst. The IHK - where you usally make the test for commercial apprenticeships - has this 100 points scheme: 100 to 92 = 1, 91 to 81 = 2, 80 to 67=3, 66 to 50 = 4, 49 to 30 = 5, below that = 6

    Salzekuchen is traditional from the vogelsberg, isn't it? i guess its more like a heavy, strong dish for lunch. have you ever tried ?

    This did not look like it was a Zimtschnecke but like a Nussschnecke, there is no cinnamon in it.
    There are also Mohnschnecken and Rosinenschnecken.

    In Lauterbach you absolutely have to try the Lauterbach Schrittsteine (stepping stones). This is a local speciality. There is also a special yeast cake in the Vogelsberg district. Chocolate cake, a yeast cake with a very thick chocolate coating.
    And please do an episode about the regional cuisine. You have to try the Vogelsberger variant of the Elsässer Flammekoche (Alsatian tarte flambée) Salzekuche/Lohkuche. And the local dumplings - Beutelches mit Specksoße oder Pilzsoße.

    where i live, a kreppel is a pfannkuchen without jelly and a berliner is a pfannkuchen with jelly 🙂 I suggest Frankfurter Kranz with lots of cream. Usually the conditors prefer not to make much cream in a Frankfuter Kranz. Thats same with Bienstich. Best of Bienenstich is the cream, which mostly is the less of a Bienestich. You should try Zwetschgenkuchen with Schlagsahne. I also suggest Schokobananen. Again the crem is the best, which is the less you normaly find in a Schokobanane. Seems cream cost most for conditors. Mohnkuchen when fresh is delicious, if you like Mohn first at all. Käsesahnetorte and Käsekuchen. And Nussecke with lots of Schokolad. Also not easy to find, as the backery spare choclate. What i also like is a Puddingbretzel, when lots of Pudding. Normally, Pudding is also the least. A Donauwelle is also delicious when lots of cream.

    In the German school grading is form 1-6, not 5. 1= sehr gut, 2=gut, 3=befriedigend, 4=ausreichend, 5=mangelhaft, 6= ungenügend. And you can scale it with + and -.

    You had poppy seeds and nuts ground up in the snail pastry. Mohn is commonly used in these. Some bakers will use cinnamon in the pastry if they slept well or had sex the night before. That's a joke in Germany.

    The German grading system is from 1 to 6. The grades 1 to 5 can also have a plus or minus. The grade 2+ is a bit better than a 2 and is equal to 1.7. The grade 2- is a bit worse than 2 and is 2.3. The grade 2.5 does not exist! You can not choose decimals between the grades freely, there is only .3 and .7
    The only grade that does not have a + and - is the 6. The 1 can have a +, the grade 1+ is equal to 0.7

    I never ever try "Krapfen" (= Kreppel, Berliner) anywhere than my home Franconia. First die Krapfen are not powered with powered sugar but with the "normal", with has an additional crispness, second the Krapfen are baked in upscale fat and third their inside is really filled to the core with "Hiffenmark" (rosehip puree), that is another sort of class as ordinary or cheap jam or confiture. So come to Franconia and eat Krapfen ! LG💙☘ Altogether I think your bakery has not been one of the really good one, because all of thoses things you feasted on 😂, are normally very very delicious, at least at the bakeries in my neighbourhood!

      @@CavHDeu JA, das denke ich auch. Die Menge an Füllung im gezeigten Krapfen war schon ähm sehr sparsam. Wenn ich hier in einen Krapfen beiße, kommt (meistens) an der anderen Seite das HIffenmark raus, so viel ist da drin. Mmmhh, es gibt schon wieder welche nach der Sommerpause! LG

    Let me tell ya sum. The best cakes and pastries aren't sold in bakeries. You start making some real good German friends and they invite you for an afternoon (typically it's on Sunday) if they traditional they'll have home-baked cake or pastries. These are the best.

    The german school grades in terms of "Stegreifaufgaben" and "Schulaufgaben" go from 1 - 6 actually. We have 1 more than the US!
    This is how you write Himbeere 😉
    A cake like this in Swabia will be shortened to Himbeerschnitte (cause in Swabia we remove letters wherever possible xD).
    Some Cheesecakes are also made with Philadelphia Cream Cheese.
    It is also part of some Fantakuchen recipes.
    There are two different versions of Schnecken
    - One is filled with a nutty paste
    - The other is filled with poppy seeds

    It's not a "cinnamon roll", it's a "nut roll" (Nuss-Schnecke). There's no cinnamon in there, only nuts.
