    I just picked up 3 for our Christmas dinner. This cut of meat is outstanding.
    I need to grab a couple for the freezer as they aren't available year round.
    I do brine in apple juice.
    I'll be doing mine on the smoker as my oven won't hold all 3.
    Thanks for the tips. I was debating going low and slow and then searing or just going 325 to 140 - 145.
    Low and slow it is.

    Looks good and thanks for informing more people about "not" over cooking pork. I always wondered why apple sauce was served with pork chops. Well because they were so dry and needed something to make them edible. We're doing this recipe Thursday night for dinner, follow up post to come.       One question, I have been brine "ing" meat for years but never pork. Does the apple cider brine alter the final meat color making it look darker then it is once it is cooked to 145 degrees?
