In my opinion Hewings' is absolutely correct because apostrophe ('s) is used for possession with the words ending with a hissing sound 'S' . Since most nouns are are made plural by adding S or es as suffixes, we use 's to express possession, but many people take it as the possession of plural which is not a correct interpretation.

Regarding what he mentioned at 1:28-1:32: "If I was a sandwich, what sandwich would I be ?" (I'm pretty sure what I heard had not been "If I want a sandwich, what sandwich would it be ?") .... Since this pretty much seems to be in the subjunctive mode, shouldn't it rather be "If I were a sandwich, what sandwich would I be ?" ?. BTW, as opposed to most native speakers of English, his pronunciation remains quite amazingly simple, uncluttered and understandable too ....

If his last name ends in 's' then the correct title should be Hewings's Secrets

I think both forms "Hewings's" and "Hewings'" are correct. From what I know it's optional to retain 's' coming after the apostrophe if the original word too ends with 's', just like in case of "Thomas" too (where both the forms "Thomas's" and "Thomas'" remain correct and are used quite frequently too) ....

well, you may not think so, but you are completely wrong. Is Hewings plural? No. Then add apostrophe 's'.
What if there is more than one Martin Hewings? Same punctuation? no
Are you saying that you add possession to plural nouns the same as you do for singular nouns which end in 's'?
Most journalists write it incorrectly, so now everything thinks it must be right, but it is not.

Of course, Hewings is not plural. As far as I know, if a person's name ends with letter "s", it is okay to write like the above way. Therefore, it is not incorrect. But I am not native English person.
