Japanese souffle pancakes 🥞

    Prep time: 20min
    Cook time: 10 min
    Ingredients
    - 2 eggs, split into whites and yolks
    - 20ml milk
    - 30g flour
    - a dash of vanilla extract
    - 25g caster sugar
    - butter and maple syrup to serve
    Method
    1. In a bowl, whisk egg whites until they form stiff peaks, then whisk in the caster sugar until smooth.
    2. In a separate bowl, mix together egg yolks, milk, flour and vanilla extract until a smooth batter forms.
    3. Gently fold the egg whites into the batter until just combined.
    4. Place a frying pan (you have the lid for) on low heat.
    5. Add the batter to a piping bag, lightly grease the pan and then pipe the batter into the pan. Add a very small amount of water to the pan and cover with a lid.
    6. Cook for 5 minutes on very low, and then flip and repeat, adding the water again then the lid and cook for another 5 minutes.
    7. Remove from the pan and serve with butter and maple syrup.

      Jap souffle pancakes are known to be difficult to cook. Personally, I prefer this pancake to the typical Western type. Haha. Its just so fun and cute to eat!

      Those reactions are unnecessary. It's just about show, like many entire videos indeed. It can even happen that something may taste not so good as espected or just fine. A "it's good, I like it." is totally fine and enough. You can't have an orgasm everytime.

    I think you may have undercooked the middle, next time try using a nonstick or thinner pan that doesn’t retain as much heat. Looks like this heavy pan cooked the outsides too quickly, but not the insides

    When I used to make these we used more egg whites, whipped them until you can only just hold over your head and less yolk to white ratio. 2 yolk 4 whites. Also we used a stainless steel griddle and lightly coated with oil bit very evenly so no browning in different patches. Looks super fluffy and delicious though chef!
    Still waiting on the Cantonese family style dinner for Heun Wah please chef!

      The most entertaining contest I ever saw was when they had to make stiff peaks as fast as they could then when they were done hold it over their head

    I love that even a professional chef gets startled by hot oil. Also any kind of pancake is delicious, whether it's crepes, trad. pancakes or Japanese pancakes.

    Souffle pancakes are a dessert in Japan, not like a breakfast food to fill you up. Not quite the same comparison, but there are versions where they will like stick bacon or a burger patty to make it more like a meal.

      Taste is being tested for not satiastion. So it wouldn't matter whether they were consumed for breakfast or dessert.

      @@eamondrug Totally possible and maybe I don't have the palate to realize I've made a mistake here. My friends enjoyed my cake, it tasted very similar to one I had at a Japanese bakery (that I also didn't enjoy). My guess is I was somewhat close but just fundamentally dislike the dish

    He needs to be using full fat milk and cover immediately. That’s why the pancakes were clearly undercooked. Use a tester needle to check doneness.

    I’ve seen some lately with a thin sheet of mochi on the top and macha powder those sorts of things, maybe a crème anglais instead of maple syrup and it looked heavenly. More like having Japanese soufflé for breakfast than pancakes. I also recommend trying “hotcakes” which is also Japanese. Those are some of my favorite classic pancakes round the world. Certain the packs of instant “hotcake” from Japan are way better than your average American instant pancake.

    My favorite pancakes are Alaska flower company barley flower cinnamon chip pancakes. Absolutely loaded with nutrition, fiber and protein and they really fill you up. Not only that, it's grown and milled here locally.

    Had these in a restaurant just off Harajuku street in Tokyo. They were incredible but felt light so I ate too many and then was very sick for the rest of the day 😂😂

    The pancakes probably should’ve been rotated once before flipping. Also, if the flour that was added wasn’t sifted beforehand, that would make a big difference too. Lastly, when layering the pancakes, they looked underdone (too soft). All of that combined would make them underwhelming just like with a regular pancake.

    they are that wee skosh better if you replace some of the flour with buckwheat and definitely use maple syrup grade B .
    Same with regular pancakes

    For me doing a hybrid is the way to go.
    Fold in beaten egg whites - yes
    Just keep the pancake thickness regular in the pan. No waiting..no water hazzle.
    Easy...best of both worlds.
