You're my kind of cook - the kind that screws up, that redoes things, that admits defeat but tries again. In the end, the result is oh so much better because it is earned through hard work and a bit of finesse. I can relate to your videos and cookalongs much more than I can to any other person's. Ok folks, i'm aware some of you are having problems watching the video..... apparently on desktop it is fine at the moment. But anyhow TH-cam are aware of the issue, it's happening to certain videos including this one and should be resolved soon so I won't take it down and re-upload just yet.
Love your videos! There are two different kinds of nougat by the way. One on an eggwhite base and one on a hazelnut and chocolate base. The second one is more common here in Germany and therefore used in the original toffifee. You basically mixed both kinds together. Don't know if anybody tried that out before but I definitely will!

Just so you know... the nougat idea was totally off... in Germany, where Toffifee is from, nougat refers to Gianduja, which is basically roasted hazelnut with sugar and sometimes cocoa. It's basically Nutella in a harder consistency. Do not expect this recipe to turn out tasting like the real thing.
You mixed up the different nougats there are Barry. Toffifee is made with brown nougat which is basically roasted hazelnuts with cocoa butter and chocolate. You used white nougat, also known as Nougat Montélimar. This nougat is made by whipping egg whites, sugar and honey together.
I can only imagine that living with Barry is like living with an insane inventor who only succeeds 5-10% of the time. The patience of his wife is astonishing.
This channel is back to its former glory. You are bound to grow now. One reason why everyone likes home kitchen cooking videos when it comes to TH-cam. Keep growing mate.
Great job, Barry - but what did you do with the "fails"? I can imagine Chloe and Phoebe getting their lunch boxes in the morning before school: "What have we got for lunch, Dad?". " Something really special, girls - big shards of toffee and massive globs of chocolate nougat.". "Oh. What are we having for tea tonight, Daddy?". " Erm - Toffee and Chocolate Nougat Surprise." :D
Joanne Gray... Your comment hit the spot... It really made me laugh. I was wondering what would be done with all the extra, too ... You summed it up perfectly! 😄
Barry, maybe try to just caramelize the sugar and water first while washing the sides of the pan down with water (on a pastry brush) so it doesn't crystalize... Then add the cream and butter slowly...
Oh my god Barry I was laughing my head off on the bus watching this video, as soon as you put that pan down I was like oops that's going to leave a mark. Keep the great videos coming
I've been a chef for 16 years. I have never had any of my Commis chefs (trainee) burn caramel that often haha!! You don't need thermometers, use your eyes. When it gets to a very light brown, take it off the heat immediately. The remaining temperature within the sugar liquid will finish off the cooking. Also, don't stir it until adding butter!!
My Virgin Kitchen please can you do it some point this year probably you can tie it in with a bit of Alice in Wonderland theme or put your personal stamp on it. That would be amazing.

So first i was looking in the comment section, if someone commented about your dog, your dog just makes this video so funny, when you speed up, your dog moves so much meanwhile 😂
I really wish he hadn’t have put the Toffifee on the kitchen towel. It’s going to get covered in tiny hairs & fabric, he even said it got stuck to the towel at the end. Also next time if you oil or rub butter inside the bowl before you put the cling film in then it’ll come out much easier. 👍🏼
Is TH-cam broken? I’ve tried watching this video 3 times but at a certain point the footage stays at normal speed but the sound gets super fast and sounds like something from Alvin and the Chipmunks??? What is going on?!
The nougat inside of Toffifee is actually what is called Wiener (Viennese) nougat. It's quite different from the white nougat as that one contains egg whites. Wiener nougat is this very smooth and soft hazelnut chocolate kinda thing. Toffifee is made in Germany and in these areas, when you say nougat, that's the first thing people think of, not the white one. I'd advise trying to get your hands on some proper Viennese nougat cause if you like Nutella, you will love that stuff.

I work in a hotel, and I've seen chefs put food wrapped in cling film in to 180*C ovens without it melting, so that temperature would be fine.
