  • THAT VEGAN CULTURED GOAT'S CHEESE YOU WILL LOVE! EASY & SIMPLE DAIRY FREE CHÈVRE CHEESE RECIPE
    INGREDIENTS:
    2 cups raw cashews, soaked overnight
    1/2 teaspoon white pepper
    1/2 teaspoon of salt
    1/2 teaspoon of garlic powder
    1/2 teaspoon of onion powder
    1 1/2 teaspoon of nutritional yeast (recipe below)
    1 tablespoon of apple cider vinegar
    1/4 cup of water
    1 or 2 capsules of 50 billion vegan probiotics
    METHOD:
    For a brighter final color, pick out the yellowish and darker cashews from the soaked ones. Rinse and drain the cashews, add the cashews to a blender, add the remainder of the ingredients and blend until a smooth paste. Add the probiotics last.
    Wrap the cashew cheese into a cheesecloth, tie the cheesecloths ends, put in on a non-metal colander or a plastic sieve and put it in a warm protected place, such as an oven, (with the oven turned off!) and leave it there while it ferments for about 1 to 3 days.
    IMPORTANT TIPS:
    1. To guarantee that the probiotics will work better, you can add them last, after you finish blending so it doesn’t get in touch with the blender metal blades.
    2. Use plastic or glass containers and wooden spoons only, metal will cut out the probiotics fermentation power and the recipe won't work.
    3. To avoid contamination, all the equipment and utensils you’re using to make the cashew chèvre should be very well cleaned and disinfected, I do it by washing everything I will use for this recipe in the highest temperature in my dishwasher then let everything soaking in boiling water for 5 minutes, except for the cheesecloth, to which I hot iron a couple times each side.

    Word to the wise: if using a powerful blender, if the mixture becomes heated during the blending process, let it come down in temperature and THEN add the probiotic so that the heat doesn’t kill it. I use this same process to make yogurt. Btw...no need to make excuses for liking cheese. I can’t think of anyone who doesn’t like cheese. Yum.

    On thé question of vegan substitués for méat and cheese, I agréé with You, why not for those who miss thé stuff. But this vegan 'goat' cheese is really a cheese, and with thé probiotics it's probably very good for thé digestion. Who eats enough probiotics food? I can't wait to try this! Thx so much!

    Hi all,
    I tried this, and the cheese is very good. However, a warning. I used a clean nut milk bag to ferment in. When I opened it this morning, there were a few blobs of green and pink mold. I was able to use some of the very inside cheese, but needed to discard the rest. SO heed Chef Jana's warning about careful sterilization very closely. Clean isn't adequate, it must be sterile.

    I frequently make nut ''butters'' from cashews, the neutral taste/texture allows you to add a variety of spices(garlic is my favourite) and make it taste just the way you want, without the nutty taste you would get from almonds, and other nuts.

    Second thought: if you have an Instant Pot, l’ll bet you could do the fermentation in there and use the yogurt setting for about 20 hours...that is about how long my yogurt takes and I like it tangy. I might try this. In fact, since I make my yogurt from cashews, I wonder if I could make one regular batch of yogurt with the “yogurt” consistency and another batch much thicker for the cheese consistency and pop them both into the instant pot at the same time. I wish that I had seen this yesterday because I have a batch of yogurt in my instant pot already. I could have tested it. I make it weekly...I will try this next week.

      Oh, I have purchased a instant pot of sorts, Tefal brand, to make nato and then realized it didn't have the yogurt function, boy was I mad...

      Chef Jana if you find out what the lowest temperature setting is on your pot, it may still work. To be honest...in reality...all that the instant pot does is to keep the yogurt at a steady, low temperature. In the past, when it was warm outside, I have placed my yogurt out in our covered patio all day and then in my oven (turned off) at night so that it didn’t get a draft. Yogurt is easy to make, but the manufacturers would like us to think otherwise. Admittedly, the instant pot makes it convenient. I too have an off brand pressure cooker that I had bought years ago and I too was upset that it didn’t have the yogurt setting. Its lowest temperature was too high for yogurt. Last year I finally broke down and bought the smallest instant pot that they make. My rice cooker had gone bad and I “justified” buying the instant pot because I could use it for small recipes, rice, and yogurt. The funny thing is that I didn’t need to justify it for my husband...he would’ve cared less...I had to justify it to myself...so it was an emotional mind game...lol

      @@opal777 Ha, we girls are indeed very interesting creatures, aren't we... lol... but about the yogurt, it's fine since I make yogurt out of coconut milk and probiotics, so this one I can handle however I can't get the right temperature and time to make the natto. it needs 26 hours on a 100/115F and my pot won't be on for longer than 2 hours on a low temp. Its a piece of crap this one and it is virtually impossible to get a Instant Pot here in Gran Canaria, eBay and Amazon won't ship it.

    If I let it ferment longer and left out the nutritional yeast, would the longer fermentation compensate for the flavour? I absolutely HATE the taste of nutritional yeast so I'm always looking for ways around it.

    How far do you go sterilizing your implements , should you boil the dishes?
    I love goat cheese salad,goat cheese "strudel" with quinoa & lemon, quinoa beet salad with goat cheese, so now I've finally come across this recipe! I just have to have the ingredients on hand.... probiotics can be expensive,but I'd love to try this vegan. Also,are there any (reasonable price 😂) brands someone on the comments (in Canada maybe) might recommend for this cheese? I have the hardest time looking for vegan recipes using goats cheese, Blue cheese.

      @@ChefJanaYou only need a teaspoon. I'd thought of it as I'd made a recipe which called for it to be added to mashed parsnips and mushrooms to make a vegan 'meatloaf' years ago. It was incredibly 'meaty' and the colour didn't show at all.

    On the not supposed to eat cheese as a vegan....milk goes through a process to make it cheese. Concept no different than taking cashews going through a process to make it cheese. Just my take on it, and I'm not vegan. But I'm going to make this cashew cheese. Mmmm, looked so good!!!

    Question as a poverty vegan... is there a way to make my own probiotics from a food source rather than adding costly pills? Food stamps sadly DO NOT cover supplement pills like the ones you use here... 😢

      Yes, you can, you can make sauerkraut or kombucha, I don't have the recipes here on my channel but you easily find them on internet!

      In addition to sauerkraut liquid and kombucha suggested by Chef Jana, one can also use rejuvelac or kefir water, though the former requires that the seeds/grains used are actually eligible for sprouting, which can be far more expensive than their conventional counterparts.
