Watermelon and feta are *excellent* together -- either basil or mint is great in the herb spot. I don't grill mine ( no grill), but a salad with watermelon, feta, basil, olive oil, baslamic, and pine nuts is maybe my favorite summertime meal. Watermelon is also great with some oil and chili powder or red pepper and salt. There are a lot of great global ways of treating watermelong that make it so, so awesome.

Watermelon, feta, mint or basil and Tajin. So good. As they were eating it I was thinking it would be better in salad form. Could still grill it but then slice up the watermelon and put it in a bowl.

One of my favourite summer recipes is a watermelon and strawberry salad. 🍉🍓 I cube the watermelon (about 1" cubes), cut the strawberries in half or quarters (depending on how big they are!), add some fresh mint (finely chopped), and squeeze a lime over top. Sometimes I add a bit of lime zest, too. It's SO refreshing! (and the juice that's left in the bottom is also delicious!!)

For the peach recipe, since you can't get Fresh try frozen, you may need to play with whether or not to defrost. As for favorite recipes, Watermelon Feta Salad. Bite size watermelon crumbled feta, mint, lime juice, olive oil, and salt. Or Cucumber Tomato salad. Base is thinly sliced cucumber and chunks of tomato tossed in Apple Cider vinegar, rice vinegar and Extra Virgin Olive Oil with salt and pepper to taste. Can be dressed up with fresh or dried dill, basil, and parsley (or any combination of those) thinly sliced or chopped red onion can also be added.

That drink reminds me of sherbet punch. This was something that was made during my childhood for church teas and wedding receptions. It's just sherbet in lemon-lime soda (like 7Up or Sprite). It would be made in a punch bowl by unwrapping a rectangular half gallon of sherbet, putting it in the punch bowl, and pouring the lemon-lime soda over it. Sometimes some scoops of sherbet would be floated in the bowl to make it pretty. The sherbet would gradually melt into the soda, making a wonderful, foamy, refreshing drink. I know, I know, this is very midwestern.

Love it as always! You know, if you get fresh plums, I'd try that tart again with a fresh plum. They've got a similar texture to peaches, and shouldn't leave the pastry as soggy as the canned peaches did.

I wonder if the peach pastries would have come out better if you'd dried the peaches overnight on a paper towel lined baking sheet (kinda how you do with eggplant for eggplant parm). You might even try salting them a little. That might be a really nice contrast with the sweet honey 😋

  • @sarastovall9216
    @sarastovall9216 ปีที่แล้ว +6

For the mochi, it might be easier to scoop the ice cream into balls on a lined parchment tray then freeze it prior to wrapping it in the mochi wrapper. Also, kneading the mochi flour in a bowl until it’s elastic will at least help with the messiness of everything.
My favorite is Jian Dui or red bean fried mochi dough (it’s chinese) but for summer chai ice cream is really good
Can peaches don’t work the best because of the water ratio. But you might make peach turnovers and it would work.

My favorite summer recipe is fruit ambrosia. There's a zillion different versions, but the one I make it:
    1 package of orange Jell-O
8-oz can of crushed pineapple, drained
2 cups of shredded coconut (either sweetened or unsweetened depending on your preferences)
    2 cups of mini marshmallows
8-oz tub of Cool Whip (store brand is fine)
11-oz can of mandarin oranges, drained

Prepare the Jell-O per the instructions on the package. Once it's set up, scoop it into a large bowl, and scramble the Jell-O slightly with a spoon or rubber spatula. Stir in the pineapple and coconut until evenly blended. Gently stir in the marshmallows. Fold in the Cool Whip, and then even-more-gently fold in the mandarin oranges (trying not to break them up too much). Scoop the whole mess into your desired serving bowl and chill for at least an hour before serving. (Sometimes I just more pineapple and oranges because I love them, and sometimes I use different flavors of Jello and use other fruits as well like diced strawberries.)

Supposed to use the jolly rancher flavored jello(sour apple, watermelon) but I haven't been able to find it lately, so I just use cherry, watermelon, peach, whatever sounds good. That's it roll them in the jello powder and put them in the fridge if you want them cold. I usually don't wait that long! Lol So simple, but so good! Hope you like them!

As we phoned in our order, they kept saying they were out of whatever flavor I requested. Finally, I asked what they had and they said ube. None of us had ever heard of it so I asked what that was. They said sweet potato and we were completely confused. I am fairly adventurous so I ordered it. It was definitely different.

If you try the peach tarts again, when you drizzle the honey use a butter knife. Just dip it in and it's much easier to drizzle lightly.

Why not use the white chocolate and pop rocks in the mixing feature of the ninja creamy to see how that would work? Or just throw the pop rocks as they are! 😁

The pastry you can also do with Apples or Pears. Maybe add a pinch of cinnamon on the apples.

For the watermelon, grill and chill it then chop it and make a salad with all the ingredients you used. It'd be easier to eat. 😊

You should try Japanese Pop Rocks! It's Meisan-Japan Pachi Pachi crackling candy, the flavors are great and the pops are way more intense!

Rachel You have to try this!
Cut the same pastry squares score an outside border and bake till puffed up and golden, push the middle down with a spoon leaving a border NOW for the best part cut figs and place on the pastry drizzle a small amount of honey and top with goats chease. Bake till melted and dig in! * you can substitute with fig jam but omit the honey.

Might I suggest some tajin seasoning on watermelon OR since you love margaritas like I do and you TOO want to make everything a margarita - tajin rim around a margarita glass or even lime flavored hard seltzer with fresh squeezed lime in it. SO GOOD!

That watermelon reminds me of my family’s Xmas salad staple- fresh watermelon cubes with feta mint and sliced red onions (soaked in lime juice) then dressed with the (now pink) lime juice- Yummmm! (Ok I’m the original also has black olives, but I HATE olives, so I don’t add them!)🤷‍♀️🥰

With the peaches, did you try patting them dry from the juice first? Cause I feel like it be OK if they weren’t as saturated with juice

Watermelon, mint, red onion, feta. Make that into a salad. Delicious. Let that meddle together. Oh and fresh black pepper.

I ran into a recipe last summer that any time we fired up the grill we made sure we had grapes on hand to toss on the grill. They are amazing! I think they originally were a garnish for a cheese plate I was doing. Obviously mixed with cheese and all the fun of a charcuterie would make a better video but don't save the trick for just that. Toss those babies on any time you can.

Such an interesting suggestion! Would they need to be those big globe grapes or can you use smaller grapes on a pan on the grill? It seems like red grapes would be tastier than green (but honestly that's my preference, anyway). Which works best in your opinion?

    • @elmarko9318
      @elmarko9318 ปีที่แล้ว

@@susanjeffries5108 we used big ones directly on the grill but smaller ones should work with a grill pan.

The pastry, buy frozen peaches. Use 1/2 the amount of peaches, use less honey, add a small slice of brie or blue cheese then put the pastry dough on top.
    You will LOVE it!!

Try an egg wash on the puff pasty for extra crispness. That can help mitigate the sogginess of the canned peaches.

The puff pastry needs to be cooked at a much higher temp... I don't think I've ever cooked puff pastry under 400... If you wanted to try it again I bet that would help it come out better. I would also use frozen peaches over canned ones. Slicing them thinner, adding a little sugar to them, and letting them drain in a colander before drying them off will also keep them from being overly juicy. Love your videos as always. ❤

Fresh salmon, I usally use a whole side with skin on. Cover the side with no skin with lime juice (freshly pressed with the pulp!), crushed black pepper and grated lime peels. Grill under cover on low heat so you do it not to fast and just enough so you think the fish is done. Take fresh new potato (the small ones typical for early summer right from the field that you don't need to peel). Put in aluminium foil with salt, pepper, butter, garlic and dill and put it in the embers to cook under the fish. Serve with a sauce made from creamfraiche (or youghurt) with a lot of lime and honey. That's one of my favorite summer foods :-)

if you want to try the upside down peach dessert again, after you've drained the canned peaches and place them in the oven on low (or in the air fryer, again on low) for a bit to help dry them out a touch before assembling the whole dessert.. I literally watched someone earlier today do a similar dessert, but did sliced apple (granny smith) instead of peaches.
