    Yes good ol Eccles cakes, indeed stood the testament of time; my late Father from NorthEast UK but lived & worked in South Yorkshire absolutely loved them! they look simply delicious, going to make some… am just doing my Trifle this afternoon after following your yummy Maderia cake recipe!!     I have only been watching you for about a month, I have since bought a Hysapienta oven which you quite rightly praise on this video.
    I have tried several of your recipes, the latest one this afternoon being Eccles cakes, they turned out perfectly. I am from Yorkshire and my wife is from Eccles and I will have bragging rights for the rest of the day 😀

    When I was a child, in the 50s 60s there used to be a baker in Hamilton Ontario Canada who sold Eccles Cakes and my mom would buy me one with my tea after shopping on a Friday nite. Such good memories

    I come from Cadishead which is just a few miles from Eccles. Eccles cakes were favourite treat which are not always readily available in Australia. Eccles is still a town separate from Salford.

      Thank you for sharing. A small part of the borough was transferred in 1961 to the County Borough of Salford. In 1974 the borough was abolished and its area transferred to Greater Manchester to form part of the City of Salford. The Eccles area incorporates the wards of Barton, Winton, and Eccles. So as I understand it Eccles is incorporated into Salford. However I might have read it all wrong. Best, Rik

      @@BackyardChefIt has previously been known as The Salford Hundred, which pre-dated Domesday.
      Used to read my Grandmother’s Salford City Reporter back in the 1960s.

      Sorry love but Eccles and Cadishead are part of the City of Salford. Eccles Cakes are still delicious though.

    Similarly, my mum use to buy these but we called them Banbury's (although I think they are also known as Eccles Cakes)....brings backs memories and they look so easy to make I am very tempted to make some of my own....binge watching your videos by the way, and living in Australia some of your recipes are known most are new to me...enjoying every minutes of it

    This worked amazingly well! Very easy to follow and the puff pastry sheets are perfectly sized to cut into four pieces just like your video. I stuck with cinnamon and grated nutmeg because I don't like cloves.

    Hello Rick, I love me some Eccles cakes or dead fly cakes when we were kids called then back in the day. I shall be making some of these beauties for sure, I made some lardy cakes from your recipe t'other week & that mixed spice smell takes you straight back to your childhood. Thanks for these videos.

    Nice! These are from not far from me. You see them often on market stalls. The alternative to these is the Chorley Cake, from nearby Chorley. Similar concept with different pastry

    Well Rik i tried these today, i used mixed fruit and orange extract as that is all i had in. I also topped them with golden granulated instead of white as i have a glut of it.
    I have tried many times to get the perfect eccles cake and your recipe is definitely the best. Will be doing these regular from now on, thank you once again

      You can buy eccles cakes through the internet, in America, from import warehouses. I've bought them a couple of times though, they are expensive for the quantity and size, usually about $6+ for 4 small ones. Then, there is the added cost of shipping. I'm English, lived in the US for over 40 years. I made them once, but had problems trying to close them, too much filling and too small pieces of pastry. I'll try this method, shown, looks much simpler.

      Here in small town Ontario Canada the bakeries used to sell Eccles cakes, also Empire cookies, fern cakes, and many other old fashioned treats.

    Thanks chef. Gave this recipe a go and it turned out brilliant. Produced 12 superb Eccles cakes and needed two packs of ready rolled puff pastry. They are far superior to the pale, dry efforts with little content often sold in bakers today

    I made this recipe yesterday by combining a recipe from one of my old-fashioned cookbooks and yours of course and it was lovely. They were literally gone within minutes 😂. The recipe only used ½ cup chopped nuts, ½ cup chopped raisins, and 8 tbsp strawberry jam. I combined these ingredients and added in an apple pie spice mix I made a couple of months ago as well as about 75g brown sugar. Coupled with your shortcrust pastry, it couldn't get any better than that!!

    I used to make them occasionally, but this is a much quicker method and that bought pastry looks amazing. If I make them again, some time, I'll buy the pastry and won't bother melting butter to mix into the fruit and sugar. Delicious Rik.

    Eccles is still a place in the City of Salford Council Borough. I grew up just the side of the Manchester Ship Canal.
    Last summer I traversed the Barton Swing Bridge on my Narrowboat over the Manchester Ship Canal.
    Really good industrial history around those parts.

    I recognized the Eccles Cakes name from a book series I enjoy. It is The Aubrey-Maturin series of Royal Navy stories from the Napoleonic Era, by Patrick O’Brien. O’Brien spends about as many words on what the Royal Navy was eating as he does on the naval battles! Eccles Cakes are a frequent table offering in the series. Anyway, now I know what they are and I am looking forward to preparing and eating them myself. Thank you, Rik!

    These look delicious! I have to look and see if they sell mixed peel around here. The recipe is so quick and I am very impressed with the oven. It does seem like it can do it all. Have you tried the rotisserie?

    My late hubby came from near Manchester and these were his favourite. I don't have a sweet tooth but these were easy to make for him. Another favourite was Oven Bottom Buns. We never did find a recipe that was easy to decrease for a family but did my best adjusting from memory, a King Arthur Flour one. In our hunt on the net, we connected with a lot of poms from his area, Oldham and had them hanging out for some and looking for the recipe 😂 The ones I did bake didn't resemble the ones hubby used to buy for a halfpenny, but they weren't too bad.
    Wonder if you or any of your subbys remember these?

      Awesome, cheers Rik😃. Sorry, I got the name a bit wrong - Oven Bottom 'Muffins' they're called. Yes, it's a type of bread. We can buy bread flour here but from our research a few years ago, it's not the quality of King Arthur flour.

    This looks great. I just ordered currents, can’t buy them locally. I’ll probably mix them with white raisins as they are a bit pricey. And I researched making candied citrus peal. By the time the currents arrive the citrus peal will be ready. Looking forward to trying this!

    They look really good. What's the difference between an Eccles Cake and a Chorley Cake? I've always wondered. I know I prefer Eccles.

      Good question! Both cakes are traditional English pastries featuring currants, Eccles cakes are known for their sweet, spiced filling and flaky pastry, whereas Chorley cakes are less sweet, more biscuit-like, and typically served with butter or cheese. Best, Rik

    Thanks Rik. You promised these and delivered. I have a suggestion for them, which I picked up from a video from the Real Lancashire factory where they make these commercially. They use muffin tins to load up the filling, putting the pastry square on top then pressing the filling down on top before sealing the package. I tried it and it works really well.

    I handmade literally thousands of Eccles cakes when I worked as a baker/confectioner in small bakery South Manchester back in the late 60s, we used a current, dark sugar and melted butter mixture and a specially made butter puff pastry used only for our Eccles Cakes.

      I love candied orange and lemon. Always have it on hand. I chuck it in many things. I'm just dehydrating 10 trays of cherry tomatoes to make sun dried tomatoes in olive oil. Sounds like you make quite a lot of things. Best, Rik
