Why didn't you just get the chocolate disc's they are made specifically for melting and baking with. They are softer and easier to work with. Unless you have some specific reason why you used chocolate chips.
im pretty sure those since they are for melting they don't give you that tootsie roll texture i accidentally made tootsie roll when trying to melt normal chocolate i was able to roll it into the shape and everything
Compound chocolate (which is what chocolate discs are made of) isn't actually real chocolate, it doesn't have cocoa butter in it, which is why you can cook with it easier cause you don't need to temper it. My guess is they wanted real chocolate for some reason, perhaps taste, since personally, the compound stuff doesn't taste like chocolate to me, just sugar
what Calli forgot to mention is water also causes chocolate to seize up so using oil or power based food colorings and flavorings are your only real option
