We already have a lot of birds in North Louisiana. This year is going to be the best in about 4-5 years here. Jumped about 200 out of one of my public land spots the other day. It’s gonna be a year for the books I can see it now. Good luck from Louisiana

I really need you to try my duck recipe, I don’t care if it’s not on camera. It’ll change your life lol.
Ingredients:
Mallard or wood duck breasts
Sweet Thai chili sauce
Bacon
goat cheese (comes in small plastic cylinder shaped wrappers in the deli section)
Olive oil
Black pepper (optional)
Directions:
-Marinade breast in sweet Thai chili sauce over night.
-Pat breasts dry with a paper towel.
-Turn oven to 375 degrees to preheat.
-Turn stove top to med-high heat, put about 3 tablespoons of olive oil in a pan until it just starts to smoke.
-Place breast in pan: flip after 90 seconds and take breasts out of the pan after 90 seconds on the flip side (breasts should have a sear but not fully cooked through).
-Wrap in bacon and place a toothpick through wrapped breast
-lightly dust black pepper over bacon (optional)
-Place breasts on baking sheet and put it in the preheated oven until the bacon is done (usually about 20 mins)
-Take breasts out and spread goat cheese over wrapped breasts (1-2 teaspoons per breast) Note: I’ve found goat cheese spreads much easier if set out to get closer to room temp 1 hr before cooking.
-Place back in oven for 5 minutes and take out (this will heat up the goat cheese to become creamy)
-Let breasts rest covered in aluminum foil for 5 minutes
-Enjoy the best duck breast you’ve ever eaten in your life!
