I've been watching them in order starting with the oldest video and im sad that I've finally made it to current day because that means i cant binge his videos anymore. I had a thought. If that amazing, incredible, beautiful big island thing doesn't work in Kitchen (which fingers crossed it does), might it work in your amazing future two-story library? I've often seen large islands in libraries where large tomes and maps can be set out. Not sure you plan on becoming a collector of them, but it might look the part? 🙂

It’s often difficult to sit without a bit of an overhang to tuck your legs under, might it be worth adding in some granite or marble inserts to make the short ends more user friendly, you wouldn’t lose the gorgeous integrity of the island, but you’d gain some made for purpose seating.

Strangely, I like this video with no background music. It seemed natural & realistic. Simon is the kind of carpenter/builder that everyone who ever had a renovation project dream of being able to find. Simon & Yannis as a team are unbeatable. They are pretty amazing. As soon as I heard the music, I knew it was a ‘Billy Edit’. We love your style of filming, and it makes a nice change to get back to what made us become addicted to the channel. You don’t sit on the floor and talk to the camera when Alex is around (congratulations to his sister 🥂). Like very much following your remodeling of the Convent. I think, however, you have your priorities out of order. In my opinion, the Roof needs to be number one on your to do list. Fix the roof first, stop all water leakage causing mold and timber rot. Make sure you have sealed out all vermin, birds and bats and then go on with your remodel projects. Otherwise water leaks will ruin not only some of your remedial work but also cause other future headaches. Roof fix first.
It is good having your camera man, he does a cracking job, but I still really like the ones you do, they do feel more personal. So don't ever be afraid to do some bits on your own too! It must feel exciting to see so much getting done and Ryan is really doing great all on his own!
I think that if your going to convert the convent into a hotel. With a great chef in that awesome kitchen and great antique decor marketed to tourist and a restaurant in the chapel with all the stain glasses and statues. Wow I would go there. I would recommend that you find some kind of covering for your island top, afraid that after a very short time of being used in a working kitchen it will be damaged. Even it if only something you get out when the kitchen is in use.

That lovely piece of furniture you bought for the kitchen is stupendous! I love the idea of simply giving it a good clean etc, but if you're a wee bit worried about the worktop surface becoming damaged over time, there's always the (very expensive) option of eventually getting a custom made heavy duty glass top for it. Glass would certainly be much easier to clean.
Just a thought about the unit. If it doesn't fit the kitchen, then as a table and storage in the library for piling books on and leaning over to look at books and maps and so on.

I think you made a great choice with the island, it matches so well with the wall panels. I think it will be beautiful cleaned up. You could add a granite top that is larger on one side to have barstools fit under it.
For me I don’t come for cinematography but if it helps you focus on the project better, great. But you’ve done just fine with the videoing/editing. Love seeing the project progress. And the different professional/not profession working on stuff.

I think you should reconsider, adding a marble top, or some kind of top to the island. Because if you’re going to have stools for people to sit at there needs to be a bit of an overhang.
you might think of running electrics to the Map table before you lay the tiles? We did something similar and the electrics came to floor sockets (brass flapped sockets) on the side. Really useful for plugging in machinery for cooking or laptops (when the kids get older). We also had a sink sunk in the top with a cover made from the same timber piece taken out just like a Laboratory sink? The kitchen is just looking incredible. All down to your vision.
That massive island is going to be beautiful!!! I'd keep the timber top too but maybe (I notice the wood is in sections) you could insert a lovely piece of granite or marble to have as a pastry board or chopping board. It's going to be bloody stunning! There's so much storage it would be great if one end you could somehow recess underneath so sitting at the bench would be possible. Loving this progress!
Perhaps Simon should consider the permanent move to France. You guys have quite the cottage industry of trades to keep each other busy and work referrals not to mention Yannis could legit be an apprentice.
Billy - a thought: IF you are planning for this project to be a hotel, and a very grand hotel at that, the area you are alllocating for the reception is not big enough: It may serve as a porter / concierge desk, but most front of house operations in hotels require a back office to support it: As well, it simply isn't grand enough to meet the expectations of arriving guests and to create the 'arrival experience' - equaling the standard of the rest of it: IF an operational hotel with the chapel and function spaces you are imagining has that scale of wedding, you would be catering for a great numbers of guests arriving - it isn't big enough for luggage, guests, staff for an operation that size.
Simon is great at his job and so at ease with the camera. Nice to see things moving along quickly. I love Alex's work on the vlogs. I noticed today that when you speak up close to the camera, It seems to add an extra flavour and personal touch to the vlogs. Maybe you can incorporate some of these 'asides' into Alex's vlogs.
Smashingly good job on the ceiling, looking really great. Speaking of smashing, I think Ryan is at the point where he needs more input from you. Both sinks have some damage, not his fault. He's found some rot in the shower which needs investigation. The wall between kitchen and bathroom is thicker, might be a supporting wall. You know Ryan is in over his head but I would like to see him succeed. It's your property and he needs help with the process, figuring out the layout and so on. Ryan is your Yannis. Crack On

The island for the table reminds me of the storage at my college church. My college used to be a seminary and the sacristy had large sideboards like that with thin wide drawers in it. They were for all the priests robes and lectern banners. I always wanted one for my art room.
I have not seen the bathroom in the reception part. With all of the builder's and you. Maybe put in a really nice shower. That way you have an area to shower off in at the end of the day or when you have a wedding. The bathroom can be used by whomever to get ready in. Just a great added benefit.
Gonna go fast now, great idea with the island, stools and chandelier, that kitchen will be a show place...I'm anxious to see the reception area progress too...Ryan is doing a great job of demoing, looks like it will be a great open concept space and he's learning skills at the same time...everyone just seems to be so motivated to get the projects moving in a timely manner...everyone is Cracking On as they should be, this is a huge project...!
And I really like the new kitchen " island ", I think it'll look fantastic in the kitchen. Maybe put a piece of marble or something on a corner of it to use as an area to roll out dough, crusts etc. But I'd keep the wood for the rest of it. A little clean up and then a good oil/wax/sealer and leave. Keep the videos coming!!
Love the island! Ours is about the same size and our kitchen is about a third of the size. What a great surface for bread making! If you can install some plugs in the middle for appliances it would help. You still have room for a kitchen table. Love all the progress. Alex's video is great but I like yours a lot. I love the "cues" of the opening music.

I think you made a great choice with the island, it matches so well with the wall panels. I think it will be beautiful cleaned up. You could add a granite top that is larger on one side to have barstools fit under it.

For me I don’t come for cinematography but if it helps you focus on the project better, great. But you’ve done just fine with the videoing/editing. Love seeing the project progress. And the different professional/not profession working on stuff.
I'm really impressed with Yannis. Drywalling is a really good job to learn.
I can't wait to see the videos of the new windows going in.

I think you should reconsider, adding a marble top, or some kind of top to the island. Because if you’re going to have stools for people to sit at there needs to be a bit of an overhang.

you might think of running electrics to the Map table before you lay the tiles? We did something similar and the electrics came to floor sockets (brass flapped sockets) on the side. Really useful for plugging in machinery for cooking or laptops (when the kids get older). We also had a sink sunk in the top with a cover made from the same timber piece taken out just like a Laboratory sink? The kitchen is just looking incredible. All down to your vision.
You say that Alex is the professional, but you are too Billy! I actually find your film direction SO great and honestly the reason people subscribe!
That massive island is going to be beautiful!!! I'd keep the timber top too but maybe (I notice the wood is in sections) you could insert a lovely piece of granite or marble to have as a pastry board or chopping board. It's going to be bloody stunning! There's so much storage it would be great if one end you could somehow recess underneath so sitting at the bench would be possible. Loving this progress!
Perhaps Simon should consider the permanent move to France. You guys have quite the cottage industry of trades to keep each other busy and work referrals not to mention Yannis could legit be an apprentice.
That cabinet is a beautiful great bread station for several different workers. It is called a 40-hour work week, Billey, lol.
Billy - a thought: IF you are planning for this project to be a hotel, and a very grand hotel at that, the area you are alllocating for the reception is not big enough: It may serve as a porter / concierge desk, but most front of house operations in hotels require a back office to support it: As well, it simply isn't grand enough to meet the expectations of arriving guests and to create the 'arrival experience' - equaling the standard of the rest of it: IF an operational hotel with the chapel and function spaces you are imagining has that scale of wedding, you would be catering for a great numbers of guests arriving - it isn't big enough for luggage, guests, staff for an operation that size.

Simon is great at his job and so at ease with the camera. Nice to see things moving along quickly. I love Alex's work on the vlogs. I noticed today that when you speak up close to the camera, It seems to add an extra flavour and personal touch to the vlogs. Maybe you can incorporate some of these 'asides' into Alex's vlogs.
Smashingly good job on the ceiling, looking really great. Speaking of smashing, I think Ryan is at the point where he needs more input from you. Both sinks have some damage, not his fault. He's found some rot in the shower which needs investigation. The wall between kitchen and bathroom is thicker, might be a supporting wall. You know Ryan is in over his head but I would like to see him succeed. It's your property and he needs help with the process, figuring out the layout and so on. Ryan is your Yannis. Crack On

The island for the table reminds me of the storage at my college church. My college used to be a seminary and the sacristy had large sideboards like that with thin wide drawers in it. They were for all the priests robes and lectern banners. I always wanted one for my art room.
Love your idea for the island
I have not seen the bathroom in the reception part. With all of the builder's and you. Maybe put in a really nice shower. That way you have an area to shower off in at the end of the day or when you have a wedding. The bathroom can be used by whomever to get ready in. Just a great added benefit.

Gonna go fast now, great idea with the island, stools and chandelier, that kitchen will be a show place...I'm anxious to see the reception area progress too...Ryan is doing a great job of demoing, looks like it will be a great open concept space and he's learning skills at the same time...everyone just seems to be so motivated to get the projects moving in a timely manner...everyone is Cracking On as they should be, this is a huge project...!

And I really like the new kitchen " island ", I think it'll look fantastic in the kitchen. Maybe put a piece of marble or something on a corner of it to use as an area to roll out dough, crusts etc. But I'd keep the wood for the rest of it. A little clean up and then a good oil/wax/sealer and leave. Keep the videos coming!!
Love the island! Ours is about the same size and our kitchen is about a third of the size. What a great surface for bread making! If you can install some plugs in the middle for appliances it would help.
You still have room for a kitchen table.
