Hi,
Adding powdered milk makes bread soft . If you don’t have it you don’t have to add. Adding tangzhong to bread is another way to make super soft bread.

Thank you so much for the recipe! I wonder what setting you use for the oven. I usually get issue the top of the roll not smooth and quite bready and hard.
Every oven has it’s own character. After first bake you may want to adjust your oven setting and/or you might want to monitor.
I bake in preheated oven at 350F/180C for 22-25 minutes until golden brown. I have baked both conventional and convection ovens - I used the same temperature and same baking time for both. You can brush with melted butter before baking to make softer top of the rolls.

Have the first rise in the fridge, shape, final proof and bake. Or first rise, shape, keep it in the fridge, final proof and bake. Either way would work.

hello, hope you have a great day. I have a question if you don't mind me asking, is it necessary to warm up the liquid ingredients for the dough? I've made many yeast-based doughs before in the past and the recipes usually call for the liquid ro be warmed beforehand to mingle with the yeast better. so I was wondering if it was necessary to do it?
also I tried making it without the powdered milk and currently in the process of making this beautiful recipe! I hope it's okay that I omitted the milk powder

You can use either warm water or room temperature water. Warm water would help rise a little faster.
Adding powdered milk makes bread a little softer. Tangzhong bread is plenty soft and delicious without powdered milk. Even if you omitted the powdered milk it will turn out great.

Hi Yiya San,
If you use active dry yeast you may need to activate the yeast. I used instant yeast here which you don’t need to activate. I have used active dry yeast many time without activate with great results. I know some people do. If your instant yeast is not old and you know it is good then you don’t need to activate. If you are not sure the yeast is good then it is good to activate to make sure.

If you are going to bake a lot of bread it’s the best to buy a kitchen scale cost around $20. Every time when you measure the ingredients with cup the weight would be different. When I didn’t have the kitchen scale I always have to add some more liquid or flour ingredients. It has been much easier making bread using scale.

Yes you can use this recipe for other kinds of bread. I have made many recipes using tangzhong method including dinner rolls and sandwich bread. Always turn out super soft, fluffy and delicious! Since I learned about the tangzhong method I never but bread anymore.

Is there a substitute for powdered milk?
You don’t need to add powdered milk. Adding powdered milk makes bread more soft. Adding tangzhong also makes bread super soft. I added 87g water and 107g milk - replace 87g water with milk.

Here are the ingredients increased by 25% to make 15 rolls. You will roll the dough 14in x 22.5in to make 15 rolls. You would divide 15 equal pieces - each roll would be 1.5in.

Hello - can I ask what percentage the Tangzhong is of the total flour? I'd like to scale down the recipe slightly to around 250g total flour.

You can scale down to 60% of ingredients to make about 264g total flour including the tangzhong flour amount. You can do the same tangzhong ingredients and combine with the rest of reduced ingredients. I decreased the total milk and eliminated water in the main dough ingredients base on the hydration.
3 tbsp/43g water
3 tbsp/43g whole milk
2 tbsp/14g bread flour
Dough ingredients:
Prepared tangzhong
91g whole milk
250g bread flour
20g sugar
3g salt
2.5g instant yeast or 3g active dry yeast
8g powdered milk
34g softened unsalted butter

If you can eat them all at once these buns freeze really well. You can just reheat in the microwave for 30 seconds or so.

Yes you can replace bread flour with all-purpose flour. I would use good brand all-purpose flour (much higher gluten level than the store brand).

I used 43g whole milk to make tangzhong and 107g whole milk to make dough. I also added 43g water to make tangzhong and 87g water to make dough. You can replace water with milk.

We do not use grams in the US
I have made bread using cups and measuring spoons in the past. Many times I had to add more flour or water/milk until the dough had right hydration/texture.
Measuring the ingredients by weight is much more accurate. It will be different amount of flour every time when you measure 1 cup of flour.

Good bakers do use grams in the US. Measuring dry ingredients in cups is foolish because you need to be precise
Yes it is much easier weighing the ingredients than cups. I had to adjust the flour or water/milk when I was using cups and tablespoons until the dough texture was right.
