Very nice Steve, Option for the sapwood issue, although your project looks good, would be to hide the sapwood in plain sight. How? 1. Rip the sapwood away from the workpiece and dress the edges. 2. Split the remaining material (the good wood) in half and dress the edges. 3. Glue the three pieces together to be a new flat board BUT with the sapwood in the middle of the glue-up. It is a beautiful example of contrast materials in woodworking even though it's all the same wood. PS... I like your trammel set too!
