was wondering why they were using Chico yeast. when you read the bit about them having roots in brewing, it all made sense. for the uninitiated, the Chico yeast strain comes from Sierra Nevada Brewing. The founders named it after the town they started SN in - Chico, CA. the story behind how they got it and it's prior history is pretty murky, but it's a well known and popular yeast strain.
That's cool. I love how they took the opportunity of a mistake to make something new. Maybe if Westward shipped a couple barrels to other distilleries in Texas, Colorado, Kentucky. Then ship them back after a year. Finish at Westward. Call it the Tourist barrels. Unfortunately that's probably expensive. Thank you again sir 🥃

I'd be so much more likely to join Westward's club if their club bottles were cask strength. I mean...use 375ml bottles if it helps but 45% just isn't enough.
