**SouthWest chicken recipe ( I did double amount today)
Chicken - 2 medium chicken breasts ( I use thighs only - about 2 )
Taco seasoning - 1 TBSP
Cumin _- 1/2 tsp
Salt - 1/4 tsp
Olive oil - 1-2 TBSP
Lime - juice of 1/2 lime , I use lemon too
Marinate chicken in the fridge for a minimum of 20 min and up to 24 hours.
Preheat oven to 400 F
Fry chicken on cast iron on high 5 min on each side (or until brown to your liking)
Finish cooking chicken in the oven for about 10 min ( internal temp is 165F)
Take out and let rest for 5 min before slicing
**For the salad:
South West Chipotle Ranch dressing
Salad leaves
All the ingredients are optional:
Mexican cheese
Black beans
Avocado
Cucumbers
Tomatoes
Onions
Corn
**Tofu Burgers:
Tofu burgers safe for babies starting at 6 months old:
8oz tofu, broken into chunks ( I used extra-firm, I also used silken tofu on another day and liked it just the same)
1/4 cup finely chopped onion
1/4 cup fresh bread crumbs
1/2 tsp garlic powder
1 large egg
1 tbsp veg oil
In food processor combine tofu, onion, bread, garlic powder, egg. Puree until smooth, form into patties.
In a large skillet, heat oil over med-high heat. Cook patties , turning once, 5-8 min on each side or until browned.

I love watching a good daddy show his love and I was thinking how so important it is for daddy to toss them a bit before bed and kiss them… mommy does too but daddy coming along and putting smiles and laughing I just love to see it and I’m sure they’ll calm themselves down and drift off to sleep with happy hearts like every child should ❤

If you wash your eggshells and then crumble them you can spread them around your plants and flower beds. Prevents slugs and snails and feeds.the soil.
